This winter has me like….crazy, irritated, cuckoo, loco, impatient, crazy mama bear, better watch out, don’t touch me…..okay so maybe it’s not that bad, but this has been a long winter.
I am a four seasons gal too. I love all the seasons, and have never hated winter. I grew up in Montana, with bitter, cold winters. This year, in Washington, winter has stunk. We are talking a month of single digit, below zero weather, where I looked like Jack Frost who couldn’t feel my face or hands and feet, after most runs. Then freezing rain, ice storms and SNOW like you can’t believe. Currently my backyard is a mixture of pond, slush, ice & white stuff. You need ice skates, plus rainboots / snowboots just to walk to the car. Do they make these?!
An ice storm hit Wednesday night, after it snowed all day Wednesday, then last Friday, Saturday and Sunday. It rained all day yesterday and now it’s 40 degrees. So….yes just let that all soak in. This drives a runner and mother mad. I have been honked out, fell a few times, almost fell a few 20 times, came back with what felt like frostbite, and looking like a wet dog. It’s only February folks. Winter is not near over, and I am wondering if Spring even exists. On top of that my toddler is resisting naps!! “I wake up Mommy…” You didn’t even SLEEP!!
Why me!! Okay enough of my pity party. What do I do when the weather has me and my kids going cuckoo? We read, bake, clean, cry and scream. Oh and RUN, because I am that crazy. And we online shop for groceries, because driving conditions are typically less than stellar and toting around a toddler and an infant isn’t fun. I bet the UPS and mailman love me. 😉
Or you don’t bake, because I realize these are NO BAKES. These were my original No Bake cookies. I have done a few different versions, but I am only sharing my two favorites, these being one of them. The other version of No Bakes, has a nutty, fudgy flavor and I made those while pregnant when I needed something towards the end of my pregnancy to bring me happiness. The bomb diggity and by far my favorite cookie on here.
I love a good no bake cookie. I have tried multiple ones at different local bakeries, but none have satisfied my cravings. So I decided to create my own. Both with peanut butter and almond butter. This is an old recipe, an original.
I have decided no bake cookies are better when you refrigerate them. In my opinion, they stick better this way and just taste better. And I may have a problem with eating the batter….so good!!
I did the same recipe using both peanut butter and almond butter, because I love both nut butters. You could say Marc and I had a fridge full of no bakes. Good thing they keep longer and stay fresher in the fridge. But in all honesty they don’t take long to devour. 😉 Kid approved and tested!!
- ½ - ¾ c coconut sugar or maple syrup (I tend to use the lesser amount)
- ½ c milk
- ⅓ c coconut oil
- 1 c peanut butter or almond butter (I prefer crunchy)
- 3 Tbs cocoa powder
- 1¼ c rolled oats
- ½ c shredded coconut, unsweetened
- 2 Tbs ground flaxseed (optional)
- In medium sauce pan combine sugar/syrup, milk, coconut oil, peanut butter/almond butter, and cocoa powder. Cook over medium heat until mixture is smooth and slowly bubbles (about 3-5 minutes).
- Remove from heat and stir in oats, coconut and ground flax.
- Drop onto wax paper lined cookie sheet and flatten a bit. (May have to form into perfect shape to get them to stick).
- Cool in fridge for best results and a faster eat time, about 30 - 45 minutes.
- Store in fridge for up to couple weeks. Enjoy!!
