Maybe it’s because I have been dreaming of summer or spring, that I have been consuming smoothies or protein shakes nearly every morning. Sometimes even twice a day. I have been mixing it up and enjoying new combinations, and thought this was a combination worth sharing.
I do hope you all enjoyed your valentines yesterday. We don’t really celebrate Valentines, mainly because I boycott all commercialized holidays, and more focus on the real meaning of Valentines. I read R and L a book on why Valentines is celebrated and educate them on who St. Valentines even was. I do this with every commercialized holiday. To me Valentines should really be celebrated everyday. We shouldn’t need a holiday to buy our spouse or best running buddy or friends chocolate, cards or flowers.
Or a race entry, new shoes, whatever it is. Celebrate LOVE all year long. After all, Jesus is Love and we are called to be love and be like Jesus. Walking in love, talking in love, acting in love. It’s a hard act to follow, believe me, but at least His mercy’s are new every morning and His grace limitless. And technically His mercies are new nearly every hour, because the sun sets and rises 16 times each day, according to astronauts who watch it happen. How cool is that. New mercies every few hours!! Praise the Lord, because I need them as a mom and wife.
But again I digress, back to this yummy Vanilla Carrot Cake Smoothie. You all know carrot cake is one of my favorite cakes. It’s nice to enjoy it as a cold beverage and without all the added sugar and calories. I bottled it!! 😉
You don’t need any weird ingredients for this shake. It’s simple and R even enjoyed it. Carrots and all. A new favorite among our family and so refreshing. It takes me to warm summer days. I can’t wait until I can enjoy it on a warm summer day.
I am trying to get those vegetables in throughout the day, and sometimes it’s easy to just drink them. You can pack many servings into one cup and I love that. For some reason my life has been on fast forward lately. Moving from one appointment, mess, chore to the next. Thankfully I can carry smoothies anywhere. Great post run and the protein is always welcomed. Protein is something I don’t always do a good job of consuming enough of, so protein shakes make up for my lack.
- 1 c carrots (or 2 medium size carrots)
- 1 c almond milk
- ½ frozen banana
- ¼ tsp ginger
- ½ tsp cinnamon
- ½ tsp pumpkin pie spice
- 2 Tbs oats
- 1 scoop vanilla protein powder (I use orgain)
- Ice
- Optional: hemp seeds & flaxseeds (1 Tbs each)
- Add all to a blender and blend until smooth. Enjoy
