Chocolate Chip Cookies, Paleo

A Paleo cookie that is guilt free and perfect for beating the Monday blues
Ingredients
  • 2½ c almond flour
  • ¾ tsp baking soda
  • ½ tsp salt (I prefer sea salt)
  • ½ c coconut oil, melted
  • ⅓ c maple syrup
  • 2 tsp vanilla extract
  • ½ - 1 c chocolate chips (I use enjoy life)
Instructions
  1. In a large bowl mix together almond flour with baking soda & salt.
  2. Combine coconut oil, maple syrup and vanilla extract in a small bowl.
  3. Mix the coconut oil mixture into the dry ingredients, then stir in chocolate chips and let dough chill in refrigerator for 1 hour.
  4. Preheat oven to 350 degrees, and spoon dough onto parchment paper lined baking sheet (about Tablespoon sized rounded balls).
  5. Bake for 10-12 minutes, until lightly golden.
  6. Let cool before storing in air tight container. Cookies keep for a about a week at room temp.
