Honey Dijon Sweet Potato Salad

A savory, simple salad with lots of texture great for fall and winter.
Ingredients
  • 3 sweet potatoes, chopped into bite sized chunks
  • 2 Tbs coconut oil
  • ½ c raw cashew pieces
  • ¼ c pumpkin seeds
  • ¼ c raisins
  • 1 green apple, chopped into chunks
  • ½ - ¾ tsp chili powder
  • 2 Tbs Red Wine Vinegar
  • 1 - 1½ Tbs Dijon Mustard
  • 1 tsp honey
Instructions
  1. Heat oil in a large skillet over medium heat.
  2. Add the sweet potatoes and cook until tender.
  3. Meanwhile prepare the dressing by whisking the red wine vinegar, honey, mustard and chili powder in a small bowl.
  4. Once sweet potatoes are tender & pour into a large mixing bowl. Add the cashews, apple, pumpkin seeds and raisins.
  5. Pour the dressing over the salad and stir until well combined.
  6. Enjoy warm or cold.
