Raspberry Oat Cups

A great change to your ordinary breakfast, with no sugars and fresh raspberries. Gluten Free and Vegan.
Ingredients
  • 3 c oats
  • 2 c almond milk
  • 3 bananas (ripe & mashed)
  • 3 Tbs ground flaxseed
  • ½ tsp nutmeg
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 2 tsp baking powder
  • ½ tsp salt
  • 3½ c fresh raspberries (or frozen)
  • ½ c maple syrup or honey (optional)
Instructions
  1. Preheat oven to 375 degrees and prepare muffin tins with liners or grease well.
  2. In a large mixing bowl add bananas, almond milk, ground flaxseed and mix until bananas are smooth and not chunky.
  3. Add in the nutmeg,cinnamon, baking soda, baking powder, and salt.
  4. Stir in the oats and maple syrup (if using, I personally didn't think they needed it, but I tried both).
  5. Gently stir in the raspberries, trying not to break them up.
  6. Pour into desired muffin tins and bake for 20-24 minutes.
