Raspberry Oat Cups

Serves: 30-36 muffins
- 3 c oats
- 2 c almond milk
- 3 bananas (ripe & mashed)
- 3 Tbs ground flaxseed
- ½ tsp nutmeg
- 2 tsp cinnamon
- 1 tsp baking soda
- 2 tsp baking powder
- ½ tsp salt
- 3½ c fresh raspberries (or frozen)
- ½ c maple syrup or honey (optional)
- Preheat oven to 375 degrees and prepare muffin tins with liners or grease well.
- In a large mixing bowl add bananas, almond milk, ground flaxseed and mix until bananas are smooth and not chunky.
- Add in the nutmeg,cinnamon, baking soda, baking powder, and salt.
- Stir in the oats and maple syrup (if using, I personally didn't think they needed it, but I tried both).
- Gently stir in the raspberries, trying not to break them up.
- Pour into desired muffin tins and bake for 20-24 minutes.
