Chocolate Avocado Cake, Vegan

A moist, vegan birthday cake for any celebration. You won't even notice the secret ingredient.
Ingredients
  • 3 c organic all purpose flour, unbleached
  • ⅓ c cocoa powder
  • 2 tsp baking powder
  • 2 tsp baking soda
  • ¾ tsp sea salt
  • 1½ cup raw organic sugar
  • ¼ c oil
  • 1 ripe avocado, mashed
  • 2 c water
  • 2 Tbs apple cider vinegar
  • Frosting
  • 2 ripe avocados, medium
  • ¼ c cocoa powder
  • 1 - 1½ c powdered sugar
  • 2 tsp vanilla extract
Instructions
  1. Preheat oven to 350 degrees and grease two 9 inch cake pans, one bundt pan or 9 x 12 inch pan.
  2. In a large bowl cream together the avocado, oil and sugar. Beating until the avocado is well mashed and combined.
  3. Add the water, apple cider vinegar and vanilla and stir well.
  4. Mix in all the dry ingredients next (all in the same large bowl, I often do one bowl recipes, less clean up).
  5. Divide batter between the two cake pans and bake for 28-30 minutes, or until done.
  6. Let cool 5 minutes and then remove from pans. Let cake cool entirely before frosting.
  7. For frosting:
  8. Cream together cocoa powder, avocado and powdered sugar, making sure all chunks are removed. Frost the cake once cooled, frosting the middle layer as well.
