Vegan Pumpkin Bars

Serves: 15-18 bars
- 2 c pureed pumpkin or 1 15 oz can pureed pumpkin
- 4 Tbs ground flaxseed + 12 Tbs water (flax eggs)
- 1 c oil (I use grapeseed, but you can use canola)
- 1½ c raw organic sugar
- 2 c whole wheat all purpose flour or unbleached all purpose flour
- 2 tsp ground cinnamon
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- Frosting
- ½ 8 oz container of cream cheese (vegan), so 4 ounces
- ¼ c vegan butter
- ½ tsp vanilla extract
- 1½ c powdered sugar
- Prehat oven to 350 degrees and grease a 9x13 inch pan.
- In large mixing bowl combine the pumpkin puree, flax eggs, sugar, and oil. Mix until well combined and creamed.
- Add all the dry ingredients to the bowl. Mix until well combined.
- Pour mixture into the prepared baking dish and bake for 25-30 minutes.
- Let cool completely before frosting.
