Vegan Pumpkin Pie

Ingredients
  • 1 15 ounce  can pumpkin puree
  • ¼ c brown sugar (or use ½ c brown sugar if don't have maple syrup)
  • ¼ c maple syrup
  • ½ - ¾ c coconut cream
  • 1¾ tsp Pumpkin Pie Spice
  • 1 tsp vanilla extract
  • ½  tsp salt
  • 1 tsp cinnamon
  • 3 Tbsp tapioca starch or corn starch
Instructions
  1. Preheat oven to 350 degrees. Use your favorite crust.
  2. In a medium mixing bowl combine all the ingredients, and mix well.
  3. Pour into your prepared pie crust and bake for 45 mins - 1 hour, until pie is firm in the middle.
  4. Allow to set for a few hours before cutting, best if allowed to set overnight.
  5. Enjoy.
