Lay one tortilla down in skillet or quesadilla maker.
Start layering. Cheese first (1/4 - ½ c), some spinach and avocado slices.
Sprinkle with Cayenne pepper & top with a another tortilla shell.
If using a quesadilla maker, press the lid down and let it do it's magic. If using a skillet, once tortillas are browned on one side, flip to brown the other side, until cheese is melted.
Repeat this sequence with another 2 tortilla shells (no need to be stingy, share!! ;) )
