No Bake Cookies (GF, Sugar Free, Sugar)

Ingredients
  • ½ - ¾ c coconut sugar or maple syrup (I tend to use the lesser amount)
  • ½ c milk
  • ⅓ c coconut oil
  • 1 c peanut butter or almond butter (I prefer crunchy)
  • 3 Tbs cocoa powder
  • 1¼ c rolled oats
  • ½ c shredded coconut, unsweetened
  • 2 Tbs ground flaxseed (optional)
Instructions
  1. In medium sauce pan combine sugar/syrup, milk, coconut oil, peanut butter/almond butter, and cocoa powder. Cook over medium heat until mixture is smooth and slowly bubbles (about 3-5 minutes).
  2. Remove from heat and stir in oats, coconut and ground flax.
  3. Drop onto wax paper lined cookie sheet and flatten a bit. (May have to form into perfect shape to get them to stick).
  4. Cool in fridge for best results and a faster eat time, about 30 - 45 minutes.
  5. Store in fridge for up to couple weeks. Enjoy!!
