½ - ¾ c coconut sugar or maple syrup (I tend to use the lesser amount)
½ c milk
⅓ c coconut oil
1 c peanut butter or almond butter (I prefer crunchy)
3 Tbs cocoa powder
1¼ c rolled oats
½ c shredded coconut, unsweetened
2 Tbs ground flaxseed (optional)
Instructions
In medium sauce pan combine sugar/syrup, milk, coconut oil, peanut butter/almond butter, and cocoa powder. Cook over medium heat until mixture is smooth and slowly bubbles (about 3-5 minutes).
Remove from heat and stir in oats, coconut and ground flax.
Drop onto wax paper lined cookie sheet and flatten a bit. (May have to form into perfect shape to get them to stick).
Cool in fridge for best results and a faster eat time, about 30 - 45 minutes.
Store in fridge for up to couple weeks. Enjoy!!
