Spinach Parmesan Quinoa

Serves: 4
- 1½ c quinoa, rinsed and drained
- 3 c vegetable broth or water
- ¼ c grated Parmesan Cheese
- 1 tsp basil
- 2 c packed spinach (or can use kale)
- salt and pepper to taste
- ¼ - 1/'2 tsp cayenne pepper (or to taste)
- 2-4 Tbsp olive oil, optional
- Bring quinoa and water to boil in medium saucepan.
- Cover, reduce heat and simmer for 20 minutes.
- Once quinoa is done, add in Parmesan, spinach, and spices. Combine well.
- Serve hot or cold. (Great for leftovers)
