Spinach Parmesan Quinoa

An easy 30 minute meal
Ingredients
  • 1½ c quinoa, rinsed and drained
  • 3 c vegetable broth or water
  • ¼ c grated Parmesan Cheese
  • 1 tsp basil
  • 2 c packed spinach (or can use kale)
  • salt and pepper to taste
  • ¼ - 1/'2 tsp cayenne pepper (or to taste)
  • 2-4 Tbsp olive oil, optional
Instructions
  1. Bring quinoa and water to boil in medium saucepan.
  2. Cover, reduce heat and simmer for 20 minutes.
  3. Once quinoa is done, add in Parmesan, spinach, and spices. Combine well.
  4. Serve hot or cold. (Great for leftovers)
