Sweet Potato Toast 4 Ways

Serves: 4-6 slices
- 1 sweet potato, sliced (hot dog side) into toast like slices (leave skin on)
- Optional Toppings:
- Yogurt of choice (I like greek yogurt or Siggi's), banana, maple syrup
- Cream cheese, jelly
- Peanut Butter, banana, cinnamon & maple syrup
- Egg
- Yogurt, blueberries & cinnamon
- Preheat oven to 425 degrees. Line baking sheet with parchment paper.
- Place sliced sweet potatoes on baking sheet and bake for 10-15 minutes, until tender or
- toast in the toaster, flipping a few times and toasting a few times through.
- Top with one of the toppings above.
- Store extra sweet potatoes in an air tight container in the refrigerator and heat & top again for breakfast.
