Vegan Curried Lentil Stew

- 2 sweet potatoes, chopped
- 2 carrots, sliced
- 1 c red lentils
- ½ c onion, chopped
- 1 leek, chopped (optional)
- 3 cloves garlic, chopped
- 1-2 Tbs oil
- 1½ tsp curry powder
- ½ tsp cardamom
- ½ tsp corainder
- ½ tsp cumin
- salt and pepper to taste
- 3-4 c water
- Heat oil over medium heat in a large saucepan. Add onions, leeks and garlic and saute for 5 minutes.
- Add carrots, sweet potatoes, lentils, and water. Bring to boil.
- Reduce heat to low, and add all the spices.
- Cover and simmer until carrots, lentils and sweet potatoes are soft.
- Once done serve over rice or quinoa. Or serve alone.
