Vegan Curried Lentil Stew

Hearty and Savory Dish for the cold winter months
Ingredients
  • 2 sweet potatoes, chopped
  • 2 carrots, sliced
  • 1 c red lentils
  • ½ c onion, chopped
  • 1 leek, chopped (optional)
  • 3 cloves garlic, chopped
  • 1-2 Tbs oil
  • 1½ tsp curry powder
  • ½ tsp cardamom
  • ½ tsp corainder
  • ½ tsp cumin
  • salt and pepper to taste
  • 3-4 c water
Instructions
  1. Heat oil over medium heat in a large saucepan. Add onions, leeks and garlic and saute for 5 minutes.
  2. Add carrots, sweet potatoes, lentils, and water. Bring to boil.
  3. Reduce heat to low, and add all the spices.
  4. Cover and simmer until carrots, lentils and sweet potatoes are soft.
  5. Once done serve over rice or quinoa. Or serve alone.
