Overnight Blueberry Coconut Chia Pudding

Serves: 2-3 big servings
 
Ingredients
  • ½ c chia seeds
  • 2 Tbs hemp seeds (optional)
  • ½ c coconut water
  • ⅔ c almond milk (you can use all milk if you don't have coconut water)
  • ⅛ c unsweetened shredded coconut
  • Dash of cinnamon
  • 1-2 Tbs honey
  • ½ c blueberries
Instructions
  1. Place chia seeds, hemp seeds, coconut water, almond milk, shredded coconut, cinnamon and honey in a jar or bowl. Stir and mix well.
  2. Cover mason jar or bowl and place in the fridge overnight or at least a couple of hours to allow for pudding to form.
  3. In the morning mix in the blueberries, divide between 2-3 servings and enjoy.
