Overnight Blueberry Coconut Chia Pudding

Serves: 2-3 big servings
- ½ c chia seeds
- 2 Tbs hemp seeds (optional)
- ½ c coconut water
- ⅔ c almond milk (you can use all milk if you don't have coconut water)
- ⅛ c unsweetened shredded coconut
- Dash of cinnamon
- 1-2 Tbs honey
- ½ c blueberries
- Place chia seeds, hemp seeds, coconut water, almond milk, shredded coconut, cinnamon and honey in a jar or bowl. Stir and mix well.
- Cover mason jar or bowl and place in the fridge overnight or at least a couple of hours to allow for pudding to form.
- In the morning mix in the blueberries, divide between 2-3 servings and enjoy.
