Avocado Chocolate Chip Cookies

Ingredients
  • 3 large avocados
  • ¾ cup sugar
  • 1 cup brown sugar
  • 1 tsp vanilla
  • 2 eggs (or can sub 2 tbs ground flaxseed with 6 tbs water)
  • 3 cup whole wheat flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1½ cup chocolate chips (I use dark chocolate chips or vegan chips)
Instructions
  1. Preheat oven to 375 degrees. Line baking sheet with parchment paper or lightly grease.
  2. Cream together sugars and avocado in medium bowl.
  3. Add eggs and vanilla, and beat until well combined.
  4. Add in the dry ingredients, except for the chocolate chips and combine well.
  5. Stir in chocolate chips.
  6. The mixture will be a lot more moist compared to regular cookie mixtures, so use a Tablespoon to drop onto the baking sheet.
  7. Bake for 12-14 minutes (depending on how big your cookies are) or until bottoms are golden brown.
