Flourless Zucchini Brownies, Vegan

Rich, decadent, vegan, gooey and yummy, made with natural sweeteners.
Ingredients
  • 1½ c peanut butter or almond butter
  • ½ c applesauce (unsweetened)
  • ½ c maple syrup (or honey)
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ c cocoa powder
  • 3 c zucchini, shredded
  • ½ c chocolate chips
Instructions
  1. Preheat oven to 350 degrees and grease a 9X13 inch pan.
  2. In a large mixing bowl combine all the wet ingredients, except for the shredded zucchini.
  3. Add in the baking soda and cocoa powder, and stir until well combined.
  4. Stir in the zucchini and chocolate chips.
  5. Pour mixture into prepared pan and bake for 30-35 minutes (or until toothpick comes out clean).
  6. Cool before cutting and store in an air tight container. (Keeps longer in the fridge)
