Flourless Zucchini Brownies, Vegan

- 1½ c peanut butter or almond butter
- ½ c applesauce (unsweetened)
- ½ c maple syrup (or honey)
- 1 tsp vanilla extract
- 1 tsp baking soda
- ½ c cocoa powder
- 3 c zucchini, shredded
- ½ c chocolate chips
- Preheat oven to 350 degrees and grease a 9X13 inch pan.
- In a large mixing bowl combine all the wet ingredients, except for the shredded zucchini.
- Add in the baking soda and cocoa powder, and stir until well combined.
- Stir in the zucchini and chocolate chips.
- Pour mixture into prepared pan and bake for 30-35 minutes (or until toothpick comes out clean).
- Cool before cutting and store in an air tight container. (Keeps longer in the fridge)
