Banana Oatmeal Squares

A simple breakfast enjoyed hot or cold, and great for those grab'n'go mornings.
Ingredients
  • 4 c oats
  • 2 tsp baking powder
  • ½ c brown sugar or maple syrup
  • 3 eggs, beat
  • 2 bananas, sliced into chunks or pieces
  • 2¼ c almond milk
  • 1 tsp vanilla extract
Instructions
  1. Preheat oven to 375 degrees. Lightly grease a 9X13 inch baking dish.
  2. Add oats, baking powder and brown sugar to a large mixing bowl.
  3. Stir in the beat eggs, bananas, almond milk and vanilla extract. Stir until well mixed.
  4. Pour mixture into prepared baking dish and bake for 20-25 minutes, or until lightly browned.
  5. Enjoy warm with milk, warm alone, or cold.
  6. Store in the refrigerator in air tight container or covered pan.
