Vegan Chocolate Chip Zucchini Bread

A family favorite recipe, vegan and moist.
Ingredients
  • 3 c whole wheat baking flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • ¾ tsp salt
  • ¾ cup organic raw sugar
  • ¾ c applesauce
  • ½ c grapeseed oil
  • 2 tsp vanilla extract
  • 3½ c shredded zucchini
  • ½ c chocolate chips
Instructions
  1. Preheat oven to 350 degrees and line 2 loaf pans with parchment paper or lightly grease.
  2. In a large mixing bowl, combine all the dry ingredients together.
  3. Add in the applesauce, grapeseed oil, and vanilla extract and stir together well.
  4. Stir in the shredded zucchini and chocolate chips.
  5. Pour batter into both prepared loaf pans, dividing equally.
  6. Bake for 35-40 minutes, or until golden brown on top, and when inserted a toothpick comes out clean. Cool before removing from pan. Let cool completely before storing.
