Oven Baked Potato Medley

You know by now that Marc’s favorite food is potatoes!! I always keep some on hand for those days when I don’t know what to make for dinner. They are definitely a fail safe staple in our house, and he’s never disappointed when potatoes are on the menu.

This meal is ready in 30 minutes. Slice the potatoes add in the spices and oil and bake. They are that simple. I still can’t figure out why Marc loves them so much. It must be all the great spices I use. 😉

I made a great salad to go with the potatoes.

Prep: 5 minutes               Cook time: 25-30 minutes

Ingredients: 

  • 6-8 potatoes of different varieties* (depending on size), sliced hotdog style
  • 1/8 c oil
  • 1 tsp basil
  • 1/2 tsp thyme
  • 1 tsp rosemary
  • 1/2 tsp oregano
  • Salt and Pepper to taste

*I used a mix between purple, blue, yukon gold and red potatoes, hence the name medley. It makes it more colorful

Directions: Preheat oven to 375 degrees. Add sliced potatoes to medium mixing bowl and pour oil over and mix. Make sure to coat potatoes well. Sprinkle spices (except for salt and pepper) and mix well so spices coat potatoes. Lay coated potatoes on parchment lined baking sheet. Sprinkle with salt and pepper. Bake for 20-30 minutes or until potatoes soft when poked with fork and slightly crunchy and browned on edges.
