I made this as an appetizer for my Christmas Party with my running group.
Hummus is surprisingly easy to make and a great party food. It’s a lot more healthful than the usual fatty party dips or appetizers. Instead it has great nutritional value. Pumpkin puts a spin on things. Pair it with some pita chips or crackers and dip in 😉 Also great as a spread for your sandwiches or wraps.
It was a good thing I had leftovers from the party, because Marc loved it!! I love having him as a food critic.
Total time: 10 minutes
Ingredients:
- 1 15 ounce can garbanzo beans, drained and rinsed
- 2 garlic cloves
- 2/3 c pumpkin puree or canned pumpkin
- 1/4 c lemon juice
- 1/4 c olive oil
- 2 Tbsp tahini
- 1/2 tsp cayenne pepper
- 1 tsp cumin
- salt and pepper to taste
Directions: Add garbanzo beans and garlic cloves to a high powered blender or food processor. Process until smooth. Add in pumpkin puree, lemon juice, tahini and spices. Process until well combined. Stir in olive oil. (you may need to add more cayenne pepper to your taste). Transfer to air tight container and store in fridge up to 1-2 weeks. Enjoy!!
