An easy breakfast recipe: oatmeal bake

Good late Morning friends!!

I hope your Saturday is going well thus far. I woke up with a itch to make something sweet and easy for breakfast. I have been meaning to make my aunts oatmeal bake for a couple of weeks now, but I have been so busy. Today was the perfect morning for that.

After I finished my morning run and stretches, I decided to make a quick breakfast. My aunt has an amazing recipe for oatmeal bake. I couldn’t get a hold of anyone for the recipe, but I remembered the jist of it.

So amazingly good and easy. It doesn’t taste exactly like hers, but close. It only takes 25 minutes, and 20 of those minutes are the baking time.

It’s light in calories. Really there’s nothing too it, but it still tastes delish. I like to add milk to mine.

I put together this recipe for my version of oatmeal bake:

Ingredients: 

  • 4 cups oatmeal
  • 1 cup brown sugar
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 2 1/2 cup almond milk (or any variety you like)
  • 3 eggs, beaten (or flax eggs)

**It’s also great to add raisins to the mixture and nuts, or any dried or fresh fruit.

Directions: Preheat oven to 375 degrees. Mix all the dry ingredients in a medium mixing bowl. Beat eggs and stir into dry ingredients and then stir in milk. Pour mixture into a greased 9 X 13 inch pan and bake for 20 minutes. Breakfast served!! (I add milk to mine and eat it right out of the oven so it’s still warm. So good!!)

Later today I have a friends graduation party and I am going to catch up on some homework and work on our wedding website. I started the website last night, but there’s still lots to do. Only 133 days until the big day!! Crazy!!
