Cuban Sweet Potato Black Beans and Pumpkin Pie Spiced Chocolate Avocado Smoothie

Well if that ain’t a title, I don’t know what is!! Sorry for the mouth full on this beautiful Wednesday. But seriously, I hope you have some mouth fulls of these great recipes 😉

I love the Cuban Black Beans with Sweet Potato. Perfect mixture of spice and texture. My stomach hasn’t been liking a lot of food lately, so I thought having some brown rice would be nice. I made the Cuban Sweet Potato Black Beans for Marc, with some spice. I tried it too, and my stomach didn’t seem to be bothered too much by it. It’s tasty!!

And it’s super easy and only takes 30 minutes to make. Easy prep and easy cooking.

Prep time: 5 minutes             Cook time: 25-30 minutes

Ingredients:

  • 3 cloves garlic, pressed
  • 2 large sweet potatoes, chopped into chunks
  • 1/4 c yellow onion, chopped
  • 2 Tbs coconut oil
  • 2 15 ounce cans of black beans, drained & rinsed
  • 2 – 2 1/2 c vegetable broth
  • 1 1/2 Tbsp chili powder
  • 2 tsp cumin
  • 1 tsp paprika
  • dash of cayenne
  • 1-2 Tbsp lime juice (I used fresh limes and my juice press)
  • hot sauce
  • 3 cups brown rice, uncooked.

Directions: 1. Heat oil over medium heat in a sauce pan or large skillet, and add garlic, sweet potatoes and onions. Saute for 5 minutes. 2. Add the remaining ingredients except for lime juice and hot sauce and bring to a simmer and cover. 3. Let mixture simmer for 20-25 minutes, or until sweet potatoes are soft. 4. Once sweet potatoes are soft stir in lime juice and hot sauce, to taste. Serve over brown rice.

Cook brown rice according to directions, adding in turmeric. While brown rice cooks, I prepare the remaining ingredients.

Pumpkin Pie Spiced Chocolate Avocado Smoothie

Pumpkin Pie Spiced Chocolate Avocado Smoothie

I finally mastered the avocado smoothie!! This literally tastes amazing and like dessert. My husband said it reminded him of pumpkin pie. Honestly, it almost tastes better than pumpkin pie. It’s creamy and totally addictive. I am sure I will be having this for breakfast a lot this week.

Avocado makes for a creamy texture and adds some great fats.

Total time: 5 minutes

Ingredients: 

  • 1 cup almond milk
  • 1 tsp cocoa powder
  • 1 tsp pumpkin pie spice
  • 1 Tbsp milled chia seed or chia seeds
  • 1/2 avocado
  • 1/2 frozen banana
  • 1 tsp maple syrup or to taste

Directions: Add all ingredients to a blender and blend until smooth. Enjoy a Thanksgiving pumpkin pie, I mean this delicious smoothie on a day you need something sweet.

Servings: 1
