With the weather beginning to slowly heat up out there, or at least for us in the Inland Northwest, I have been in a smoothie mood lately. A great way to cool off after running, either in the morning hours or the afternoon. It’s the beginning of a new week, and a great time to start with more veggies in the diet.
I used to always add carrots to my smoothies, but over the last few years I hadn’t added a single carrot to my smoothies. It became all about the spinach and kale. I am here to tell you that carrots in smoothies is yummy, and a great way to sneak them into your children’s diet.
I needed a carrot fix the other morning, so I decided on a Carrot Cake Smoothie. After all carrot cake is my favorite cake, and totally hits the spot for breakfast.
This recipe has no added sugars and only whole ingredients. It’s packed with beta-carotene, which will give your skin a nice orange hue, and is full of antioxidants. Antioxidants will help fight skin damage from the spring/summer sun that is in full swing, as well as fight free radical damage from day to day pollutants and stress. Sweetened with dates or raisins, and a little cinnamon to help regulate blood sugar levels, as well as lower cholesterol and fight inflammation, this smoothie is a nutritional powerhouse.
You won’t even be able to tell there’s a veggie in this smoothie, making it ideal for children. It’s sweet, with out having any added sugars.
- 1 c almond milk
- 1 Tbs almond butter (or peanut butter)
- 2 carrots (big carrots, washed and cut into thirds)
- ¼-1/2 tsp cinnamon
- 5 dates or small handful of raisins
- 1 scoop protein powder (optional)
- Ice Cubes
- Place all ingredients in a blender and process until well blended and carrot is well processed.
- This smoothie will make a large serving.
- Enjoy
