When it’s summer time, anything frozen or cold is the next best thing as a summer treat. I love ice cream, berry pies topped with coconut whipped cream or fresh coconut ice cream and puddings.
There are so many great Farmers Market picks that are easy to turn into delicious treats everyone will love. Sometimes you might have to sacrifice heating up the house a little bit to enjoy some berry muffins, pies, bars, or even cookies. And even the fresh vegetables at farmers markets or from the garden can make great desserts. Zucchini and carrot are great in cookies, breads, muffins and cakes. Beets are even great to use as well. Butternut squash can be baked into breads and muffins too.
We have some favorites in our house, that I have to make every summer or disappointment would be sure to follow. Here are so of my favorite desserts to make during the summer using the fresh ingredients from our Farmer’s Market or from our garden. Most are made with coconut sugar and other natural sweeteners. 😉
Strawberry Rhubarb Cheesecake Bars – GF Ginger Snaps are used for the crust, with a great strawberry rhubarb pudding swirl. They are amazing!! I personally love them frozen so they are a great treat in the hot summer months. I kept the added sugar low in these bars.
Strawberry Rhubarb Chia Pudding – This is made with coconut sugar, a healthier sweetener. It’s full of fiber and has great texture. Rhubarb is a great source of vitamin C, potassium, calcium and vitamin K. The strawberries help to give it some natural sweetening, so there isn’t much need for a lot of added sugar.
Vegan Triple Berry Pie – Summer wouldn’t be complete without a nice fresh berry pie, and this one is sure to hit the spot. I used a graham cracker crusts, and filled with strawberries, blueberries and raspberries. Topped with your favorite ice cream or coconut whipped cream. I always find it fun to pick the berries yourself too 😉
Vegan Coconut Blueberry Ice Cream – Everyone loves ice cream…..right?! It’s simple to make your own ice cream and easy to have vegan options available too!! You can control how much sugar you want, and this ice cream has no added sugar. Woot Woot!!
Zucchini Muffins – One of my favorite muffins!! I love adding raisins or chocolate chips to these. I even have a recipe for a GF version as well. You can make a couple dozen and freeze for later too. Muffins are great for freezing. And these are vegan as well!!
Summer Rhubarb Crisp – This is my sisters favorite crisp. I have to make it at least 3 or more times during the summer for her. Our summer wouldn’t be complete with out it. It has been a loved recipe for many years, and she swears only I can do it right. Who doesn’t love a good crisp?!
Fresh Peach Crisp – My favorite crisp is peach crisp. I love fresh peaches. They are so juicy and sweet. After picking peaches it’s great to be rewarded with a nice fresh cobbler or crisp. And since peaches are so sweet you don’t need lots of added sugar.
Vegan Cinnamon Rhubarb Muffins – Rhubarb in muffins? Yes please, I love the tartness of the rhubarb with a hint of cinnamon. Another great dessert to pack in the freezer for time pressed mornings or when you need a quick snack.
Coconut Chia Pudding – Yes Please!! Chia puddings are fun and easy to make. You can even make them over night as well, by adding the water or milk and letting stand in the fridge over night. No need to turn on the burners.
Frozen Fruit Kabobs – You don’t have to only use meat and vegetable for kabobs, and you don’t need a grill either. These are fun to make with the kiddos, and are a great healthy snack with only natural sugar found in the fruits. You can use apricots, grapes, blueberries, strawberries, and peaches. Have fun with them!!
