Why does it always take time to get back into the swing of things after a vacation? It’s so hard to go back to working and a schedule. I loved being able to not feel rushed and to actually enjoy free time, without worrying about tasks and chores. I didn’t open my laptop the entire time while on vacation. It was refreshing. I actually started a book to read for pleasure, and I forgot how much I love reading to just read.
Upon getting back from vacation, I have been working like crazy to get organized for Fall and Winter. I need to organize our storage and get rid of things that we don’t need, haven’t worn in years, or don’t use any more. There are moments when I can’t deal with the clutter and all the stuff. The stuff that is never used and is only good for taking up space.
I have realized that material things aren’t going with us when we leave this earth and most if not all won’t be missed, so why do I need all of the stuff? Over the years I am learning and trying to be more intentional about what I do, say and acquire. It’s amazing all the junk we carry with us and keep with us, but yet never use. More stuff to dust and clean. So I am packing it up and packing it out.
I know it’s the last of zucchini season, but these brownies are worth sharing. I made them a few weeks ago for our cross country team and they went over well. Zucchini is a great food to add to many dishes. Pancakes, cookies, and now a great chocolatey treat.
I love the cake like texture of these brownies. They are gooey and rich in chocolate, but not overly sweet. I always go light on the sugar, trying to use natural sugar instead. Sometimes there’s no need for added sugar. Within minutes the whole pan was devoured by the cross country team, so I was glad I took photos before our team dinner and snagged one for Marc to try. I was lucky the recipe was a success on the first go.
These Flourless Zucchini Brownies are vegan, GF and sugar free, and you can’t even tell there’s zucchini hiding inside. Great warm with a cold glass of almond milk or enjoyed chilled. What’s even better is you only need one bowl to make this, and no hand mixer, just good’ole arm power. Less clean up!!
- 1½ c peanut butter or almond butter
- ½ c applesauce (unsweetened)
- ½ c maple syrup (or honey)
- 1 tsp vanilla extract
- 1 tsp baking soda
- ½ c cocoa powder
- 3 c zucchini, shredded
- ½ c chocolate chips
- Preheat oven to 350 degrees and grease a 9X13 inch pan.
- In a large mixing bowl combine all the wet ingredients, except for the shredded zucchini.
- Add in the baking soda and cocoa powder, and stir until well combined.
- Stir in the zucchini and chocolate chips.
- Pour mixture into prepared pan and bake for 30-35 minutes (or until toothpick comes out clean).
- Cool before cutting and store in an air tight container. (Keeps longer in the fridge)

While experimenting with a flourless recipe, I also gave a gluten free recipe a try. Lately I have enjoyed doing flourless, because gluten free flour can be hard to work with and can be tricky. The texture of gluten free treats can be hard to digest (if you catch my drift), but these brownies were again loved by the team and the family. I thought the recipe was worth sharing as well. Definitely a thicker, more dense brownie.
I used my GF flour blend for these and again used some zucchini as well. They are vegan too.
Vegan GF Zucchini Brownies
You’ll Need:
- 1 1/2 c Gluten Free Flour blend
- 1 tsp xanthan gum
- 3/4 tsp salt
- 1 tsp baking powder
- 1/2 c cocoa powder
- 3/4 c raw organic sugar
- 1/2 c oil
- 1/4 c almond milk (or coconut, soy milk)
- 3/4 c applesauce (unsweetened)
- 2 tsp vanilla extract
- 3 c shredded zucchini
- 1/2 c chocolate chips
Directions:
- Preheat oven to 350 degrees and grease a 9X13 inch pan.
- In a large mixing bowl combine all the dry ingredients, mix well.
- Add in the wet ingredients (oil, milk, vanilla & applesauce) and stir until well combined.
- Finally, stir in the zucchini and chocolate chips.
- Pour mixture into prepare baking dish and bake for 28-32 minutes (or until toothpick comes out clean).
