Happy Hump Day!!
Lately all the days meld into each other. I don’t even know what day of the week it is half the time. Thank goodness I have my husband’s work schedule and my appointments to keep me straight. We are beginning to get into a little bit of a routine now. Trying to manage both children, and I’ll be honest, I am scared for my mom to leave.
I have grown accustomed to her helping with R, while I tend to LJ and doing my cooking and cleaning. I can totally manage two children under two with her help, but I am a little nervous about when it’s just me at home with them all day. I am sure most moms think the same thing, or maybe I am alone in my thinking….? We all get through it. I know it will be crazy for a time period, especially as we move into R’s 2 year old stage. She’s already been throwing some tantrums. But that’s why I have my baking and running….they keep me sane and keep my kids sane.
Don’t you love peanut butter cookies? They are my dad’s favorite. I have a love for peanut butter, but sometimes I need a change up and love my almond butter. I am trying to get more fat intake to gain some weight. Yes, I am one of the lucky women who doesn’t have to work to lose any weight after having a child, instead I struggle to gain weight and keep weight on, especially once my milk comes in. I always lose more than I gain and never know why. I struggle to keep the weight on and up.
I am trying to get my intake from healthy sources to nourish my body, gaining weight a healthy way not with fatty, unhealthy fast foods or junk food. So lots of nut butters, nuts and coconut oil. Yum, yum. I will be honest and say I have had a few milkshakes in the past week to help with weight gain and because that’s all I wanted after delivering LJ.
Flourless Almond Butter Cookies
I guarantee you’ll love these flourless cookies just as much as the original version. I even have a recipe using peanut butter as well, if you are more of a peanut butter person. The recipe is the exact same, but peanut butter is subbed for the almond butter. I tried to use less sugar and instead used coconut sugar for a lower glycemic index and because I didn’t want a lot of sugar intake now that I am nursing. You can also use honey or maple syrup instead of the coconut sugar. They both work great and the cookies still taste great.

I added some chia seed for some extra essential fatty acids and fiber, and used ground flaxseed + water for eggs to keep them vegan. If you don’t mind eggs, you can just use 3 eggs in place of the ground flaxseed + water.

- 1½ c almond butter (I like crunchy)
- ½ c coconut sugar (or ½ c maple syrup)
- 1 tsp vanilla
- 3 Tbs ground flaxseed + 6 Tbs water
- 1 Tbs milled chia seed or chia seed (optional)
- 2 tsp baking soda
- 1 tsp cinnamon
- ½ tsp salt
- Preheat oven to 350 degrees.
- In medium bowl combine almond butter, maple syrup, vanilla and ground flaxseed + water and beat well.
- Add in milled chia seed, baking soda, cinnamon and salt, and stir until mixed well.
- Roll dough into balls and spread on lightly greased baking sheet or parchment lined baking sheet.
- Bake for 10-12 minutes. Allow to cool before removing from baking sheet. Cool on cooling rack. Enjoy!!
- **These cookies are "fragile" and need to cool completely before handling.

P.S. Is anyone already missing summer? I feel it flew by this year and we didn’t get to enjoy the lake as much as we normally do. Maybe I am missing summer because I have been inside with the newborn so much, and because the temperatures have dropped. There have been some chilly mornings, and I am dreading winter. I told myself, enjoy Fall first!! Trying not to worry about winter and the cold. The past few days have been beautiful in the 70s, and I have been able to take advantage of the sunshine with both R and LJ. We needed our vitamin D fix.
