Hello Hello!!
I finally get to add a recipe to my Main Dish page!! I have been craving Mexican food for a while, so I finally made some enchiladas last night for Marc and I. I was also in the baking mood and needed to use up the bag of avocados my mom brought me, so I thought COOKIES!!
These enchiladas hit the spot!! I haven’t made them forever. And they are simple to make, without having to worry about cooking meat first.
I use a frozen veggie mix. With some rice, cream of celery soup, black beans, and green enchilada sauce.
This rice mixture is great to just eat by itself. I usually have some left over to eat for lunch. I like the flour and corn tortilla’s from Trader Joes or you can use the tortilla’s of your choice. I just filled the tortillas with the Mexican rice mixture. I added some enchilada sauce, cheese and tomatoes on top and they were ready to bake.
They were scrumptious. My sister who is a huge enchilada critic and meat lover, had some of the leftovers for lunch today and loved them. Here’s the full recipe.
After my short day at work I also was able to bake up some avocado chocolate chip cookies.
These have been a hit among my friends and family, and have some healthy fat with the avocado.
I use the avocado instead of butter. The cookies are more moist and thicker than regular chocolate chip cookies, and have a different color to them. They still taste great and you would never know I used avocado. My nephew Micah loves them too!! Give them a try!!
I arrived early to my sister’s house this morning just to wait for my sleeping nephew to wake up to see his auntie!!
He does look cute while he sleeps. I am excited to spend the day with my lovely sister and maybe take a break from wedding plans…..or not…..:)
I made an executive decision to not take a rest day this week from running. Tapering is hard for me!! I have just been doing some easy 4 milers and did a tempo run this morning. Boston is only 12 days away, so close I can almost taste it. 🙂
