Happy Monday!! (or what’s left of it)
I have been spending a lot more time wedding planning, running, and freezing summer fruits. I made a great fruit salad and some vegan, GF rice bars for you all to try. I have literally been living on fruit salad and these rice bars. You have to try them.
Although I didn’t have anything planned for this past weekend, I still managed to stay relatively busy somehow. I was glued to my computer writing a 10 page research paper for my nutrition classes and made a lot of phone calls to various wedding related peoples. And I am still trying to get the house organized, little by little, I will get it all done.
Marc was out of town on a fishing trip on the coast with his dad, uncle and cousin, so I did have some time for a sleepover with my sister and her family.
Then we went to Shakespeare in the park Sunday after Church, where I spent most of my time chasing my little nephew around.
It served as a great workout. He loves to be chased!!
But let’s get to the yummy stuff…..
Fresh Minted Summer Fruit Salad
Like any fruit salad, all this needs is time for cutting the fruit and adding some mint sprigs.
My mint plant is growing all over the place, so I needed to use some sprigs before it’s too late.

Brown Rice Bars with Chia Seeds (GF and Vegan)
My GF rice protein bars are excellent for fueling runs or for after runs. They sit easy on the stomach and have very minimal sugar. I used maple syrup instead of sugar and added chia seeds. Surprisingly, the rice will keep well in the fridge for a few days without getting hard. Otherwise just warm in the microwave with a damp paper towel covering them (this helps to soften the rice). I like them cold though.
If you use the right kind of rice though with the right amount of water, the rice will stay soft. I used brown rice and I recommend organic brown rice. Calrose rice works as well, but it’s white so not as nutritious.
Quick update on the running: I have been running more and more consistently and building my mileage back up. My Achilles feels a lot better. Less than two weeks, and I will be running Ragnar Colorado. I can’t wait!! It will definitely be the greatest 2nd Bachelorette Party anyone could ask for. Who wouldn’t love spending 30 some hours in a van running 200 miles with 5 other sweaty girls?!
