Rainy runs and taco salad craze

Happy Monday!!

I had a great start of the week with some 400’s. My last speed workout before the Boston Marathon, besides the short tempo run on Wednesday. I ran 5.10 miles, with 4X400, and a 1.25 mile warm up and 1.5 mile cool down, for a total of 37 minutes exactly today (I will admit I stretched this run out, because I hate tapering).

Boston is only 7 days away!! Woohoo!! I can’t wait, but the tapering is killing me. I know it’s great for my body and my body deserves it and needs it, but I almost feel I hurt worse when I taper. Weird, I know.

I started packing on Friday night, because I like to get ahead of the game. Way ahead of the game.

I knew it was going to be a busy week, so I needed to get a head start. Ok, who am I kidding? I always pack this far in advance!! It’s my type A personality. I will have more updates on my packing process later.

Friday night, Marc and I enjoyed some of my leftover veggie enchiladas. We had dessert first, because I wanted to try the new avocado ice cream at our local ice cream shop, The Scoop. It’s all locally made ice cream, and oh so good.

 

The avocado ice cream was different, but great paired with coconut ice cream. I am not sure what to think of it. I definitely liked it mixed with something.

Saturday was spent cleaning house, after I enjoyed a nice short and sweet 8.08 mile run in  1:08. It was a dreary Saturday, but I got a lot accomplished. And finally started one of my research papers for my Master’s program, and basically finished it!! FINALLY!!

I made a great Taco Salad, my favorite thing right now.

In fact, on Sunday I made taco salad again for my fiance and sister, and today for lunch I had a taco salad. I am just loving Mexican food right now.

Sunday’s run was wet!! The rain wasn’t the worst part. The drivers were. Some people aren’t considerate of us runners, and I was more soaked from the drivers splashing me, than from the rain. It was a short 3 mile run….it felt way too short.

Marc and I spent the day running some errands after church. I had to pick up some new sunglasses for Boston. Then I picked up a cute dress for our engagement photos. Trying to come up with outfits.  Getting excited to take the photos.:)

 

Marc and I spent the afternoon with my sister, Cassie, and her husband, Josiah, and their sweet baby boy, Micah!! He is turning one April 23, so Cassie had some errands to run for his b-day party. I am in charge of the cupcakes for everyone, and excited to do it.

I also helped her grocery shop. She is trying to eat healthier and wants Micah to eat healthy. She hates cooking, so this is a big step. We are taking baby steps and she is doing great!!

An update on my friend, Troy, who just received his heart transplant: He is doing great. Can’t have any visitors yet, but his mom was able to go into his room for about 10 minutes today. Everyone else can only look from afar. They don’t want anyone near him, as he is on immune boosting pills so he doesn’t reject his new heart. Watching him go through this process is inspiring and so exciting. I can’t wait to talk to him!!

    I just watched the movie, “5th Quarter”. A movie about a college football’s brother who died and was a heart donor. The family got to meet the young mother who was the recipient with her little girl. I watched while doing book-work, so may have missed some parts of it but what I did see was inspirational. Reminded me of Troy and to keep praying for the donor’s family. I too am excited for your marathon. Make sure to take your advice and get extra sleep! Vegetable ice-cream – what’s the point?

      I am trying with the sleep. And troy is doing great!! Can’t see him yet. An avocado’s a fruit, so it’s actually fruit ice cream….and some healthy fats added to your ice cream is great!! You would probably enjoy it.
