Cheese, Cheese, and lots of Cheese!!

Happy Friday Friends!!

In less than two days Marc and I leave for Jamaica!! Can’t wait for sunshine and the beach!!

I feel like I have been eating lots of cheese over the passed couple of weeks. Vegan cheese that is. We had a bit of a mis-communication (Marc and I). He soaked way to many cashews and what resulted was a week of meals based on homemade vegan basil ricotta cheese and lots of it. This then resulted in me trying to make up recipes that would be great with the ricotta cheese.

The following are the recipes using the vegan basil ricotta cheese. It’s great!! I love it. It even tastes great with carrots and crackers. I would know because I tried almost everything!!

Vegan Zucchini Lasagna (GF)

Even though it’s meatless and noodleless it’s amazingly filling and delicious. It might be tastier than regular lasagna, and it’s more simple to make in my opinion. No noodles to have to worry about breaking, and no meat to brown. I add sweet bell peppers, mushrooms, spinach and kale in between layers.

Vegan Mac’n’Cheese Veggie Bake w/ Basil Ricotta

Marc said this was one of his favorite dishes (until I made my Chili, and then that became his new favorite….men). It is tasty though. You can’t even tell it’s vegan. Who said mock cheese can’t taste as good?!

Vegan Basil Scalloped Potatoes

They say the way to a man’s heart is through his stomach….the way to Marc’s heart is potatoes!! Seriously, he loves them!! You know on Forest Gump the scene with “shrimp salad, shrimp gumbo, shrimp soup…..” That’s Marc. “Cheesy Potatoes, Scalloped Potatoes, Mashed Potatoes, Oven baked Potatoes…” So it’s no wonder he loved these.

Oddly enough these are better cold to me!! I loved eating them as leftovers without reheating. Kind of like eating cold pizza (if you’re a cold pizza fan).

This last recipe is basil ricotta free!! It’s a quick and easy meal to make when you are short on time. Spaghetti Squash with Veggie Vodka Marinara

Trader Joe’s has some great marinara sauces, and this one in particular is my favorite. I love to add more veggies to my marinara’s but you can add meat too if you like. Give it a try. I guarantee you’ll be a fan.

All these meals had my older sister telling her husband: “See if I knew how to make healthy stuff like this, then I would eat healthy all the time. This is the best healthy food I have ever had.” So it’s proof that eating healthy can taste good!! For all you doubters out there!! 😉
