Sweet Potato Cilantro Lime Bowl

All I can say is this salad is so good!! I was able to get some of the ingredients for it from the farmers market such as cilantro, green onions and bell peppers. It’s kind of my new farmers market salad.

Sweet Potato Cilantro Lime Salad

Who would have thought that cilantro and lime were enough to dress a salad. It’s definitely hearty for a salad. The mango and sweet potato gives the salad a variety of tastes. Can I just say I love the versatility of sweet potatoes.

A friend from work had this salad a while back and had me taste it. It was great. I asked for the recipe, but I couldn’t find the one she gave me, so I tried to remember all that was in it. I do remember the distinctive lime and cilantro taste.

Great sweet potato cilantro lime salad

If I were to make this again I might add another mango. Oh and if you don’t plan on feeding a lot of people or want leftovers, I suggest halving the salad. The leftovers taste great though!!

Total time: 10 minutes

Ingredients: 

  • 2 cooked sweet potatoes, cut into cubes and skin removed (I bake mine or you can microwave
  • 1 mango, cut into chunks
  • 2 bell peppers, chopped
  • 1-2 avocados, chopped
  • 1 cup cherry tomatoes, halved
  • 2 15 ounce cans black beans, drained and rinsed
  • 2 c frozen corn, thawed
  • 1 bunch green scallions, chopped
  • 1 bunch cilantro, chopped
  • 2 limes, juiced

Directions: In a large bowl add the sweet potatoes and top with the remaining ingredients. I added the lime and cilantro last. Stir well to combine all salad ingredients. Enjoy with warm sweet potatoes or cold. It’s great leftover.

Servings: 8-10

    This looks so yummy and colorful! I love adding lots of color to meals. Anything with mango and avocado sounds delicious to me:) I’ll have to try making this.

    I am with @runwiki! I love your recipes. I made the oriental cabbage slaw last week. It was awesome. Putting this on the next grocery run. Our farmer’s market only had peas and greens this weekend. I’ll have to wait a bit before I can call it a farmer’s market salad. But, I am sure it rocks!
