Weekend of Fun: CdA Beach & Berry Picking

It’s safe to say Marc and I had way too much fun this weekend and way too much sun. Thankfully we didn’t get sun burnt (just a tad pink) while at the beach on Friday, but I can say that being 28 weeks prego and being in the sun all day isn’t the greatest combo. Glad I love my water.

Friday was a tough 8 mile run, that I struggled through, but somehow managed to get it done. I can honestly say that there are days where running isn’t my favorite, but after I am done with the run I am glad I drug myself out there. It’s just been way to hot here this summer. But it’s been great for berries.

Vegan Triple Berry Pie

After our morning run we ventured off to Coeur d’Alene and spent most of the afternoon there. It wasn’t too busy, which was surprising since they were having an Art Festival in the city park. We walked through it and grabbed some Georgia Peach Lemonade after we got done soaking up the sun.

I always love seeing everyone’s own expressions of art and the many talents. Marc and I spent over 3 hours just enjoying the sun shine, with some clouds every so often. I had to do some swimming in the lake in order to stay cooled off.

I also had my first ever comment on being pregnant. As I was walking back from the restroom, an older gentleman asked how far along I was. I have never had anyone ask me this, let alone a guy. I guess I usually don’t walk around in a bikini though where you can more easily see the bump, otherwise it’s easier to hide. I guess I will be getting more of that now.

We stopped to see my sister’s family and grabbed some Mexican food before heading home. I then thought it would be a great idea to run through Riverside State Park before picking berries and peaches Saturday morning. It was a hot, sweaty mess.

Marc and I appreciated the cloud coverage for more than half our run and the sprinklers near our car. I probably won’t be doing a long run through the park anymore while pregnant. Too many hills!! 12 miles was more than enough for me. I forget how steep and long some of the hills are.

Berry picking was hot, but we got some fresh raspberries, strawberries and blueberries for my Triple Berry Pie (vegan & GF). Fresh berries in pie makes the pie that much better.

Of course I had to top it with my favorite vegan ice cream, Luna & Larry’s Coconut Bliss. So delicious. And I used coconut sugar in the pie filling, only 1/3 cup. I find that too many recipes call for way too much sugar. I used a Graham cracker crust with an oatmeal topping. I hate making pie crust, it’s not my thing, so I always opt for the easy way out.

Vegan Triple Berry Pie

Serves: 8 slices
 
A summer favorite, with less sugar and an easy GF crust. It's great topped with vegan ice cream or whipped cream.
Ingredients
  • For the Crust:
  • GF Graham crackers, one row or about 2 cups crushed into crumbs
  • 6-8 Tbs coconut oil or butter (about ½ c)
  • Pie Filling:
  • 1½ c blueberries
  • 2 c raspberries
  • 2 c strawberries, sliced
  • 1½ Tbs lemon juice
  • 2½ Tbs corn starch
  • ⅓ - ½ c coconut sugar (depending on sweetness of berries)
  • Topping:
  • 1½ c oatmeal
  • 1 tsp cinnamon
  • ¼ c brown sugar
  • 4 Tbs coconut oil or butter
Instructions
  1. Preheat oven to 375 degrees and grease a pie dish
  2. For the crust: In a small mixing bowl with a fork mix in the coconut oil or butter with the Graham cracker crumbs.
  3. Keep adding butter or oil until the crumbs are well coated and will easily form a pie crust.
  4. Pour the crust mixture into the pie dish and press to make a pie crust.
  5. For the pie filling: Mix the berries, sugar, lemon juice and corn starch in a medium mixing bowl.
  6. Pour over the Graham cracker pie crust.
  7. To make the topping: Mix the oatmeal, cinnamon, brown sugar and coconut oil or butter in a small mixing bowl, until crumbly (like a topping for a crisp). I prefer using a fork.
  8. Pour the oatmeal topping over the berries.
  9. Bake for 45 - 50 minutes, until oatmeal topping is lightly browned.
  10. Let cool for 1 hour before serving
  11. Or you can serve after it cools for half hour, topped with your favorite ice cream (so the ice cream melts). It's just harder to dish out this way.

Marc says it’s the #BestThingIHaveEverEaten his words. I had to keep him from eating the whole pie dish, but I did make sure to send him some in his lunch today. 😉

We also picked tons of apricots and peaches too while out berry picking Saturday. I already have 6 gallon size bags of raspberries and 2 of strawberries. My freezer is jammed packed. I plan to dehydrate some of the apricots and freeze the rest.  I am excited for the rrozen peaches for smoothies. Marc wants me to make some peach ice cream too.
