Flourless Blueberry Pancakes (Vegan)

I don’t usually post on Sunday, but I wanted to share one of my favorite pancake recipes. This recipe is used as a base for many of my pancake recipes, because it is so easy to prepare and uses very minimal ingredients. I like to make them vegan at times or I use eggs, whatever I have on hand.

You may find that these pancakes become your favorite as well, and a staple. I appreciate that they are easily freezable and you can make bulk. They taste great cold too!! Kid approved as well.

You’ll find that sometimes you just don’t feel the need for flour. These pancakes taste just as good without it. I have cooked them vegan without eggs and have done them with flax eggs using ground flaxseed from Barleans, and both ways taste the same. So you don’t have to be worried about taste changing with flax eggs. In fact, using flaxseed will give you various health benefits with added EFA’s, fiber and  nutrients.

And they look a little more normal than my usual pancakes. All you need is 6 ingredients and you’re on your way to a great breakfast (vegan or not). Feel free to use any type of fruit to mix in or even chocolate chips. Believe me I have tried everything mixed in to my pancakes. Pancakes are a regular in our household especially on the weekends when I have more time to prepare breakfasts. I love Sunday pancakes.

Flourless Blueberry Pancakes (Vegan)

Serves: 10-12 pancakes
 
These are GF and equally as tasty, and great with many toppings.
Ingredients
  • 2 cups oats
  • 1 cup yogurt or Kefir (pick the yogurt of your choice, I use almond yogurt if want vegan or greek)
  • 4 flax eggs (4 Tbs ground flaxseed from barleans + 12 Tbs water) or 4 eggs
  • ½ - 1 cup almond milk
  • 2 tsp vanilla
  • 1- 1½ cup blueberries
Instructions
  1. Process all ingredients except blueberries in a blender, until mixed well.
  2. Stir in blueberries.
  3. Heat pan to medium heat or a griddle to 325 degrees, grease and add pancake mixture to pan. (You can make them as big as you like.)
  4. Flip pancakes when bubbles begin to form (2-3 minutes).
  5. When golden on other side they're ready to enjoy.

    These look intriguing. I’ve done almond pancakes which are delicious but not seen this combination of ingredients… will have to try!
