I love summer nights and watching the sun go down over the mountains. We have such long days, which makes for many more hours in the garden weeding for me. I love these days. Even with the longer days, I feel I have so much to do, and not enough time to accomplish it. Such is life it seems.
R has been enjoying her swimming lessons. Maybe a little too much. I can’t take her cuteness. She knows how to kick her feet and move her arms, and loves doing it. She gets so excited every day when we get to the pool. She kicks her feet even as we are walking into the pool, and when she sees the kiddos she starts screaming. I love it!!
It’s sad that her two week lessons are over. Marc and I will definitely have to take her to the pool many times this summer. She has made our summer so much fun, a blessing and joy she is.
So thankful we have started to cool down here in the Inland Northwest. I am finally able to take R outside and play for longer stints without her getting a heat rash, and she loves to be outside. There’s so much to enjoy in the summer, one of my favorite seasons.
Even with cooler temperatures, I am still enjoying cold breakfasts. No need to turn on the stove, when there’s so many great ways to make breakfast without the heat. I love overnight oats, but there’s only so many variations you can do. I switched to chia seeds. They make a wonderful pudding and breakfast.
I wanted to make use of local blueberries and the coconut water I had in the fridge. I prepared this before bed, and enjoyed it in the morning. All I had to do was open the fridge, throw in some fresh blueberries and stir. And bam!! I love the addition of coconut water for added potassium. Chia seeds are full of fiber and essential fatty acids, so they are great addition to anyone’s diet and can be used in so many different ways. Pudding is one of my favorite, obviously.
It’s not much of a recipe, but I have been enjoying them. This would work as a healthy dessert as well.
- ½ c chia seeds
- 2 Tbs hemp seeds (optional)
- ½ c coconut water
- ⅔ c almond milk (you can use all milk if you don't have coconut water)
- ⅛ c unsweetened shredded coconut
- Dash of cinnamon
- 1-2 Tbs honey
- ½ c blueberries
- Place chia seeds, hemp seeds, coconut water, almond milk, shredded coconut, cinnamon and honey in a jar or bowl. Stir and mix well.
- Cover mason jar or bowl and place in the fridge overnight or at least a couple of hours to allow for pudding to form.
- In the morning mix in the blueberries, divide between 2-3 servings and enjoy.
