My cousin made some cookies once with avocado and they tasted great way back in the day. I wanted to try for myself, and I finally made a recipe that worked. They are a hit among friends and family. and you could say they are the reason Marc and I ever started dating. It was because of my “weird” cookie mixtures that I was talked about at church, and Marc starting talking to me (you can read more about our story here).
Since we just passed our 4 years of officially being “an item” over the weekend, I thought I would share an oldie but goldie, recipe of mine. These delicious Avocado Chocolate Chip Cookies. These became one of Marc’s favorite, and were the start of something amazing for us.
Thank God for my endless joy in creating anything that sounds unusual, just so I can prove healthy and “weird” is good. Although, these are still a cookie, so I wouldn’t go around eating them like they are a “health” food. A cookie is a cookie, this just has some healthy fats our body needs and I use less sugar.
As I said they are Marc’s favorite cookie, but he may be bias since it was the cookie that changed our lives…..okay a little dramatic but hey.
They aren’t a new recipe by any means for us, but I thought I would share them with you all. It’s a my go to chocolate chip cookie recipe. I like them more than a traditional chocolate chip cookie and can never just have one.
They are a lot more moist then regular chocolate chip cookies and thicker. I find them to taste even better, but I love moist, thick cookies. Kind of like a muffin/cake like texture, that’s fluffy like. Okay, so they are hard to describe, but they are super easy to devour.
These pictures are making me drool!! Oh and they are kid friendly. Everyone who has tried these, loves them!! I made them for bake sales through high school (yes that’s how long I have been making these folks), and everyone always loved them. Hope you enjoy them as much as we do.
- 3 large avocados
- ¾ cup sugar
- 1 cup brown sugar
- 1 tsp vanilla
- 2 eggs (or can sub 2 tbs ground flaxseed with 6 tbs water)
- 3 cup whole wheat flour
- 1 tsp salt
- 1 tsp baking soda
- 1½ cup chocolate chips (I use dark chocolate chips or vegan chips)
- Preheat oven to 375 degrees. Line baking sheet with parchment paper or lightly grease.
- Cream together sugars and avocado in medium bowl.
- Add eggs and vanilla, and beat until well combined.
- Add in the dry ingredients, except for the chocolate chips and combine well.
- Stir in chocolate chips.
- The mixture will be a lot more moist compared to regular cookie mixtures, so use a Tablespoon to drop onto the baking sheet.
- Bake for 12-14 minutes (depending on how big your cookies are) or until bottoms are golden brown.

And I have been putting off sharing some great news…..I accepted a position for assistant cross country coach at a local high school. I was asked at the beginning of August and after meeting with the head coach and discussing logistics and what’s expected of me, I couldn’t resist. Coaching is always something I have wanted to do. It’s a short season, but it will keep me busy for sure the next couple of months. R has met some of the girls, and I don’t think she minds being the center of attention.
I have also been in full swing of my marathon coaching certification as well. My life would be abnormal if I wasn’t taking classes or doing school of some sort. We are excited for this new chapter in our lives.
