My Weekend Recap of food

I can’t believe it’s already Monday!! Where did the weekend go?! Where did the week go?! I spent most my weekend cooking and prepping for the week ahead. I made a Vegetable Crockpot stew, and I posted the recipe.

It is delish. I will be eating it for lunch the next couple days. And since it just got colder in the Northwest, it’s helped to warm my bones after those chilly runs.

Sunday  I made some more pancakes to keep with my tradition. They were Cinnamon Buckwheat Pancakes, and they were delicious. Made way too much, so I had some for dinner last night, and for breakfast this morning. And they tasted just as good. I still have some left!!

These pancakes were a great source of protein after my Sunday morning run, and I added some ground flax for some healthy fats.

I was in cooking mode after that and made some protein bars and bites to snack on through the week after runs (this cost me church time :/ ). This is my version of weekend food prep; centering around my post workout snacks.

Here’s the Peanut Butter Granola Protein bars. Super easy to make and really good. Now I don’t have an excuse for not replenishing after my run.

These were the Almond Bites I made. These have to be my favorite post workout snack, because they have a chocolatey flavor from the carob powder, and who doesn’t like chocolate? If you don’t, let me help you with your problem. 🙂

I then decided to make some raw granola. I like to keep this on hand for breakfast when I feel like oatmeal. When I tried eating raw back in college, I lived on this stuff. And I soon realized that I couldn’t eat 100% raw, because that meant no more soup and sweet potato fries, and that would just be dumb. And it meant no more dark chocolate, and that just isn’t going to happen. I do try to keep most my meals raw though to help with pH levels, but that’s a topic for another time. (Recipe to Follow)

I also add a great friend in town on her spring break for the week. On Wednesday we had a girls night, just her, my older sis, and I. It was a blast. We ate lots of cheese, pasta and bread (Italian), and ended the night with some Froyo. My dear friend Hannah’s addicted to sugar, it’s not a secret. So we have to end everything with some kind of sugar laden, chocolatey, high calorie treat. So actually Froyo was a lot better than what’s typically chosen.

Of course my weekend runs are one of the best parts of the weekend. Just when I thought spring was approaching in the Inland Northwest, it got colder, and even snowed a little down town. But I did manage the fastest 12 mile training run thus far this year.

 

That made my weekend!! And I can’t forget my cherished time with my little nephew. I got to watch him on Saturday, and even though he was crabby we still had fun (and it was nothing a nap couldn’t fix).

Because of my eventful weekend, I know have a lot of studying to catch up on. You win some, you lose some.
