Pregnancy Update: 24 Weeks & Strawberry Rhubarb Cheesecake Bars

Happy 4th of July!!

I have my brother and sister-in-love in town and we are ready to have some sibling fun with them.We just got back from picking cherries and strawberries.

I thought a nice treat would be nice to leave you with for the weekend, and it’s patriotic with red (redish color), blue and white. These Strawberry Rhubarb Cheesecake Bars are a hit and great for the summer time heat.

They are better if they are kept frozen. It allows them to set better, and make them easier to cut. I used ginger cookies for the crust and just some coconut oil. That easy. The cheesecake is just a mix of cream cheese, egg and a little sugar with vanilla. Then I added in my Strawberry Rhubarb Pudding (without the chia seeds).

They aren’t vegan, but they are Gluten Free. I used the GF ginger cookies from Trader Joes.

I haven’t done a pregnancy update in forever if ever, so I thought I would join the band wagon and leave you with my pregnancy questionnaire. Today I am 24 weeks. I can’t believe I am already in my 6 month and nearing my third trimester.

Symptoms: Currently I haven’t had many except for leg cramps and the occasional bloody nose in the morning. I do still get nauseous if I don’t eat every couple of hours.

Baby’s Size: The size of an ear of corn. We had an ultra sound on Monday, and the baby is just over a pound and growing great. They always comment on her great heartbeat.

Maternity Clothes: I haven’t bought any actual “maternity” clothes. I am still wearing all my regular clothes. I did buy some shorts and capri’s one size up, as well as some stretchy waist band shorts, but haven’t worn them yet. I am so happy the loose waist band is in, because I might get away with no maternity clothes.

Stretch Marks: None so far

Sleep: Not so much. My sleep is so restless and the leg cramps make it worse. (I never had leg cramps before, and I get them all the time now, compression socks are so amazing with tart cherry juice before bed!!)

Miss anything: I haven’t even popped too much, but I already miss my abs, as vain as it sounds. I also miss good sleep and actual “easy” runs.

Cravings:.I generally don’t have cravings, at least nothing crazy, which is kind of nice. If I see some one else eating though, I have to be eating myself then.

Aversions: Still can’t look at tofu, and can only eat it if it’s cooked just right. The texture of some foods are total aversions as well.

Looking Forward to: The baby arriving!! I know it’s 16 weeks away, but now that I know the sex, I am soo excited for our little girl. Also, looking forward to running without having added weight, cramps, pressure and having to pee.

What I’m loving: Feeling the baby girl kick and move and reading to her. I also love looking at all the baby girl clothes and finishing up the baby registry.

Workouts: Lately they haven’t been fun, with lots of calf cramping and pressure. It’s also getting hotter out, and I heat up fast.
