Vegan Baked Peach Oatmeal

Howdy Friends!!

Even though I have been freezing and drying peaches like crazy, we still had more than enough to use. I made my Peach Crisp the other night, and then made this super yummy breakfast bake on Saturday morning.

It doesn’t take long to prepare and it’s GF, low in sugar, and dairy & egg free. It’s the perfect breakfast for the late summer season. You better hurry and make it though before peaches are out of season, because I think recipes always taste better with in season produce.

It’s basically an oatmeal bake (which you all know I love) but with added peaches. I tried to make it pretty, by adding some peaches on top. I don’t think it helped my photography skills any though 😉

 

It’s great to cut into squares and freeze individually to pull out for a quick breakfast or post workout fuel too.

Vegan Baked Peach Oatmeal

Serves: 8-10
 
Perfect for a late summer breakfast, when peaches are in season. Easy, delicious and great for freezing.
Ingredients
  • 3 c oats
  • ¼ c brown sugar or coconut sugar
  • 2 tsp cinnamon
  • ½ tsp baking powder
  • 3 Tbs coconut oil
  • 1 tsp vanilla
  • 2 c almond milk
  • ¼ c applesauce (or can use ¾ c w/ no ground flaxseed + water)
  • 2 Tbs ground flaxseed + 6 Tbs water
  • 3 peaches, chopped into bite size pieces (medium sized)
  • 2 medium peaches, cut into wedges for topping (optional)
Instructions
  1. Preheat oven to 350 degrees. Grease a 9 X 13 inch pan.
  2. Combine all dry ingredients in a large mixing bowl.
  3. Stir in ground flaxseed + water, coconut oil and vanilla.
  4. Then add in milk & applesauce, mix well.
  5. Stir in peaches.
  6. Pour into prepared pan.
  7. Top with remaining peaches (optional) and bake for 20-25 minutes.
  8. Enjoy topped with milk or plain.
  9. Great for cutting into bars and freezing for later use.

I also wanted to share this super easy and yummy Creamy Avocado Pesto Pasta I made on Monday night. It’s a 15 minute meal, but yet it tastes like a lot of time and effort went into it. All you need are some avocados, basil and spaghetti noodles (and a few spices).

It’s vegan, so no dairy products and also no soy.

After whipping up the homemade creamy sauce, you mix it into your noodles and dinner is served. It would pair nicely with a salad, steamed veggies or grilled salmon.
