Overnight Cinnamon Coconut Chia Breakfast Pudding

I love having easy breakfasts, especially now that I am a new mom. Most of the time I don’t eat for hours after my run and workout, because I go straight to feeding baby and trying to accomplish other tasks, and because I don’t feel like I have the time to make something.

Lately, I have been enjoying the already prepared breakfasts, and I don’t mean those coming from boxes or wrappers. Sugary cereals, pop tarts, and granola bars don’t fill me up for long, and as far as nutrition goes, they are lacking.

Overnight Cinnamon Coconut Chia Breakfast Pudding

So enter in overnight oats or chia seeds. Simple to prepare the night before, so all I have to do is open the fridge, grab a spoon and dig in. I can even eat my breakfast while feeding baby (as a mom you learn to multitask). BTW chia pudding pictures aren’t fun.

Hardly a recipe, but it’s so tasty, I decided I had to share. I am happy my hubby loves these breakfasts just as much as I do.  Breakfast is the most important meal of the day, and now you can’t make the excuse you don’t have time. 😉 There’s no time involved in making this for breakfast, because the less than 5 minute preparation was done for you the night before.

Chia seeds are a great source of fiber, staving off hunger, and essential fatty acids. You can top with fruit and nuts as well, just don’t stir them in until morning. I like to think of it as a breakfast pudding.

Overnight Cinnamon Coconut Chia Breakfast Pudding

Serves: 1
 
For those time crunched mornings. Filled with fiber and EFA's.
Ingredients
  • ¼ c chia seeds
  • 1 c almond milk
  • 1 Tbs shredded unsweetened coconut
  • Splash of maple syrup
  • Couple dashes of cinnamon
Instructions
  1. Mix all ingredients in a jar or a bowl, and stir (or if using jar cover and shake)
  2. Cover and place in the refrigerator overnight.
  3. Enjoy for breakfast!!
  4. Also try topping with your favorite fruit , raisins or nuts.

    This would be perfect for my early mornings– I love having something ready.. otherwise I don’t eat, which is awful. I must try. Bry, I love your food!

      I know. Honestly breakfast is getting harder for me Lisa. I wasn’t eating for hours after working out, making it almost a lunch. It’s hard with kids. I get it now LOL!!

    Looks good! When eating paleo, I miss “cereal” breakfasts. Have you tried heating this? I think I’d add in a scoop of protein powder for oomph. Frozen blueberries would also be a treat.

      Definitely would be hard when paleo, but now there’s options. I think the protein is a great idea, and I love adding berries to mine as well. Nuts are also a great addition.

    I am right there with you when it comes to missing breakfast, but I do love how simple and great this recipe looks, and as you mentioned you can multi-task while eating it. Breakfast is important and should not be missed. So making it ahead of time is a great way to ensure you are eating in the morning to kick start your metabolism. Thank you for the tip!
