Banana Oatmeal Squares

Ever feel like you are always on the go? Well I certainly have the past few weeks. I feel as though I am rarely ever home, making it hard to prepare wholesome meals. Marc and I’s work schedules are all over the place, and we rarely are eating dinner together because of it. From cross country meets and practice, to late nights at work, we can go all day without seeing each other. Our meal we can actually eat as a family is breakfast, which is the most important meal of the day, so I am all for family breakfast.

Since we can typically count on breakfast together, I like to do make ahead breakfast or a breakfast that will last a couple days so during the time pressed mornings, when we are both rushing out the door we can have something to grab’n’go (if need be) as we rush to get ready while managing R. This is why I love these Banana Oatmeal Squares.

Banana Oatmeal Squares, GF& simple

They are simple, and great eaten cold or warm. You can pour milk over them and eat like an oatmeal bake, or you can cut into bars once they have cooled and eat on the go. The oatmeal squares are the perfect texture, and won’t crumble, leaving less of a mess in the car. Yes, sometimes breakfast is ate in the car.

Simple Banana Oatmeal Squares

I also love to eat these as a snack after a workout or before my cross country practices. Perfect blend of carbohydrates and a little protein (top with peanut butter for more protein) with the oats and banana. A few simple ingredients gets you a wholesome breakfast the whole family can enjoy. Even R loved to eat on these. So much easier than making 3 different breakfasts. They are low in sugar and you can easily omit the sugar all together, as the banana adds some sweetness. The squares are gluten free as well.

Banana Oatmeal Squares

Recipe type: Breakfast
Serves: 20 squares
 
A simple breakfast enjoyed hot or cold, and great for those grab'n'go mornings.
Ingredients
  • 4 c oats
  • 2 tsp baking powder
  • ½ c brown sugar or maple syrup
  • 3 eggs, beat
  • 2 bananas, sliced into chunks or pieces
  • 2¼ c almond milk
  • 1 tsp vanilla extract
Instructions
  1. Preheat oven to 375 degrees. Lightly grease a 9X13 inch baking dish.
  2. Add oats, baking powder and brown sugar to a large mixing bowl.
  3. Stir in the beat eggs, bananas, almond milk and vanilla extract. Stir until well mixed.
  4. Pour mixture into prepared baking dish and bake for 20-25 minutes, or until lightly browned.
  5. Enjoy warm with milk, warm alone, or cold.
  6. Store in the refrigerator in air tight container or covered pan.

It’s been fun ushering in Fall and taking advantage of cooler running temperatures. Fall really does offer the best running. Cool temperatures and so many colors!! I always enjoy falls in the Inland Northwest. The perfect temperatures for being outside running, apple picking, pumpkin picking, and playing. R loves eating the leaves and is loving our walks to the mailbox. I hold her hands so she can walk on her own, assisted, gradually working up to walking the whole distance. She loves it. She often times stops to look at the burning bushes and pick the leaves off, or touch the neighbors fall flowers.

Our month of October is sure to be a busy one with many family birthday’s including R’s, some races and a new baby due in the family.  It seems life will never truly ever slow down. I have a friend’s wedding I am in in December, with bridal showers and a bachelorette party to help plan and attend. Sometimes I am already thinking how I can’t wait for the holidays to be over, and we haven’t even started the holiday season.

For now, I am going to enjoy fall and all it’s beauty, and every now and then stop to take a few deep breathes.
