I enjoyed many days of birthday celebrations and blessings. So many sent me well wishes and made my day and even my week so special. I was never a fan of my winter birthday, because my raynauds aren’t a fan of the cold, making it hard to take part in winter sports. I do love skiing and cross country skiing, as well as sledding, but it has to be 30 degrees or my hands are in so much pain.
Thankfully its only been 20 degrees on my morning runs, so that was a nice birthday gift. I was getting tired of the single digit weather, it is nice to have a heat wave, and next week it is going to be even warmer, after the cold spell in the next few days. There are days I get tired of the gray, cold winter, wishing it to be over. But end of next week, it will be in the 30’s and maybe even low 40s for the high, which will feel amazing. Like summer in January.
Cooking warm foods is my jam during the winter months. I feel I eat so much more during the winter months, it’s probably my body wanting to put a few pounds more of cushion on to stay warm, especially this cold winter!!
Spinach Avocado Quesadillas
Quesadillas are one of those meals I loved as a child. I would be lying to say that I don’t love them now. Sometimes those old childhood meals remain favorites even through adulthood. Quesadillas are easy and can be protein packed or green packed as well. I loved to add black beans, sweet potatoes, and other times I love to go green, adding in spinach and avocado. This recipe was first tried a few years ago, and some recipes just stick.
Insert my Spinach Avocado Quesadillas, and you have a green packed, nutritious quesadilla. So kid meals can be nutritious. These are fun and sometimes it’s fun to be a kid again. All it takes for me sometimes is one meal, and I can feel 5 again. Perfect to add to school lunches.
YUM!! Top with salsa, more avocado, hummus or whatever your favorite quesadilla topping is. Please enjoy a favorite, easy meal. This meal is easily gluten free with the right tortilla shells, and can be made vegan if you chose non-dairy cheese.
*I use a quesadilla maker, as we got one for our wedding. Using this makes it much faster and the clean up a breeze. If you don’t have a quesadilla maker, just heat a frying pan over medium heat with some oil to coat the bottom.
- 4 tortilla shells
- spinach
- ½ avocado sliced
- ¾ - 1 c mexican cheese blend
- cayenne pepper (to taste)
- Lay one tortilla down in skillet or quesadilla maker.
- Start layering. Cheese first (1/4 - ½ c), some spinach and avocado slices.
- Sprinkle with Cayenne pepper & top with a another tortilla shell.
- If using a quesadilla maker, press the lid down and let it do it's magic. If using a skillet, once tortillas are browned on one side, flip to brown the other side, until cheese is melted.
- Repeat this sequence with another 2 tortilla shells (no need to be stingy, share!! 😉 )
