Chocolate Coconut Macaroons

Some yumminess on the blog today. Then we can pick up with the series on the macro-nutrients. I hope you are all excited for the new addition to the blog. You’ll see only some minor changes on the blog. We are still working out all the little glitches behind scenes.

Mariah will be posting periodically throughout the months. My content will stay the same, I will be keeping with my informational posts on nutrition. I think you will all enjoy the inspiration provided by Mariah and the insight she has to offer, and it takes a little bit of the load off my shoulders. Keeping a blog isn’t always easy and at times more work than one could expect, thus I am glad my sister was wanting to come on board.

Gaining some help on content gives me more freedom to create new recipes and to enjoy some kitchen time. The best part of recipe creation is when the first go around tastes delicious. In the case of these Chocolate Coconut Macaroons, there’s deliciousness in every bite and only four ingredients. Simple ingredients but decadent.

Coconut has been making a strong presence in our diets lately. From smoothies to popcorn, and now some macaroons. Just one bite and you’ll be wanting another and another. Ir’s a good thing these have only natural sugars from honey or maple syrup. Four easy ingredients: coconut oil, unsweetened shredded coconut, cocoa powder and maple syrup or honey.

These are great for dessert or for when you are craving something sweet. They are rich and smooth. Full of those healthy MCT’s and antioxidants found in the cocoa powder. Bite into these or just pop the whole macaroon into you mouth and enjoy a burst of flavor and know that it’s doing your body good.

Sometimes even the fewest ingredients can lend the most flavor. I let a few family and friends sample these before posting the recipe and all couldn’t wait for me to post them. Marc says that if he was stranded on an island and could only bring two things these would definitely be one of the two. He doesn’t like chocolate all that much, but he’s ate his way through a few of these.

You won’t want to share them, and I won’t judge you 😉 Because to be honest, I made sure to hide a few from my husband. Hey, don’t judge I am a chocolate fan, mom of two children 2 and under, and a runner that is always looking for something sweet that won’t sabotage my performance and training. Yes, sugar will do that. All you athletes, moms, dads, grandparents, busy individuals trying to stay healthy, indulge in these and don’t feel guilty about it.

Chocolate Coconut Macaroons

Serves: 15-18
 
Smooth, decadent
Ingredients
  • ½ c coconut oil, softened
  • ⅓ c cocoa powder
  • 1 c unsweetened shredded coconut flakes
  • 3 Tbs maple syrup or honey
Instructions
  1. Add all ingredients to a medium mixing bowl, and stir until well combined (will be more oily).
  2. Place the bowl in the refrigerator to help firm up the mixture, about 15-30 minutes.
  3. Once the mixture is easy to work with, not too firm, roll into bite sized balls. (the mixture will be a little oily, but will firm up once you let them set in the refrigerator after rolling into balls, as the coconut oil firms up).
  4. Let stand in the refrigerator until firm & Enjoy!!
  5. Store in the refrigerator in an air tight container

I try to find healthier versions of sweets to help those who need something sweet or crave sweets, because I get it. Believe me I do!! That’s why I have a desserts page people. I couldn’t survive motherhood without a  few guilty pleasures like dark chocolate and the occasional sweets, and as a nutritionist I know how sugar can wreak havoc on the body so I understand the need for balance. My balance is creating healthier versions of all the traditional favorites, and new recipes that maybe are a little more unconventional, but yet are healthy and taste amazing.
