Coconut Mango Peach Overnight Oats

Lately I have been so pressed for time. I enjoy those mornings that I know breakfast is already done for myself and the kids. Mornings are extremely chaotic for the most part, so having a little piece of mind is always welcomed. One of my favorite prepped breakfasts is overnight oats. I can make jars and jars of them and store them in the fridge for a week, and sleep a little better at night knowing that the next morning I won’t be scrambling to get the kids their breakfast, the baby fed and myself fed and ready before clocking into work. Or I won’t have attempted to make myself breakfast, only to find it a few days later still in the toaster or microwave, or sometimes my closet. Yes, all of the above happen at least once a week to me. You should see what happens to my lunch. 😉

Most mornings I am lucky to have my teeth brushed, thus those mornings when breakfast is already done, I actually enjoy breakfast, or at least some of it (my children eat half of it). Taking my supplements are important too, and my favorite is my Barleans Omega Swirls. I simply add the swirls into smoothies or over my oatmeal at times, because it’s convenient and easy. Yes!! Fish oil for breakfast can be tasty. Don’t believe me? Read my last post on how I convinced a picky sister to try Barleans Omega Swirls, and how she loves the swirls!! Didn’t even know she was taking fish oil, they are that good.

I took a challenge of creating a tasty recipe using Omega Swirls. The flavors are endless, so you can create variety in your mornings. My favorite Barleans Omega Swirls are Mango Peach, Strawberry Banana, and Pina Colada. My favorite ways to consume them is by the tablespoon, over my oatmeal or overnight oats, in my smoothies,  as a yogurt topping and even on ice cream (for those days when work and the kids were just a little too much for me). Oh, and also great on waffles and pancakes!!

You have to try for yourself my Coconut Mango Peach Overnight Oats. An easy recipe your kids will love too!! In fact, my kids ate most of mine and I made a note to make more for next time. Omega Swirls will keep you immunity boosted, your skin soft and smooth, hair and nails soft and shiny, they help promote healthy brain function and supply the EFA’s we need. EFA’s are important for healthy hormone production, regulating blood pressure, proper thyroid and adrenal function, and act as an anti-inflammatory.

You’ll love my island fresh overnight oats. Takes me back to Jamaica and the beach, and their endless supply of fresh coconuts and mango. Quickly throw these together the night before and wake up with a wholesome breakfast, high in protein and fiber, and packed with the EFA’s you need to get you through anything life throws at you for the day. Vegans and those avoiding gluten can enjoy these overnight oats as well.

Feel free to use the milk of your choice (I like almond milk). The recipe also sugar free. My kids like a little maple syrup in theirs for sweetener. Make as many jars as you think necessary. I advise making more, because everyone will wants some!! 😉 I have learned as a mother if you don’t like sharing your food, then you better make enough for everyone to have some!!

Just a quick warning, don’t heat the oils or bake with them. You can top your cooked food with the oils, but heating the will destroy the oils. Double bonus there are no artificial flavors or colors, gluten free, dairy free & non GMO!! Woot!!

Coconut Mango Peach Overnight Oats

Serves: 1 jar / serving
 
Island fresh breakfast oats packed with EFA's
Ingredients
  • ¾ c rolled oats
  • 1 Tbs chia seeds
  • 2 Tbs shredded unsweetened coconut
  • 1½ c almond milk
  • 1 tsp maple syrup (optional)
  • ¼ c frozen or fresh mango, chopped into squares (can add frozen or fresh peach as well)
  • 1 Tbs Mango Peach Barleans Omega Swirs
Instructions
  1. Add rolled oats, chia seeds and unsweetened coconut to a mason jar or bowl. Mix together.
  2. Pour almond milk and sweetener (if using) over oats. Gently stir.
  3. Top with mango.
  4. Pour Barleans Mango Peach Omega Swirls on top. Cover and let stand overnight in the fridge.
  5. Enjoy for breakfast.
