It’s been a while since I have updated you all on all the great food I have been eating, because believe me Marc and I have been enjoying lots of refreshing smoothies, salads, and the occasional treats.
I had some requests for my smoothies and my recent zucchini cookies so I decided to share the recipes with you all!!
I wanted to start the New Year on a healthy note, and decided to break out the juicer. It’s been collecting dust over the past months and it was time to start juicing again, and I wanted to start doing more smoothies since I have a freezer full of peaches and berries from all the picking I did this summer.
Fresh, homemade juices are so healthful and when the right combinations amazingly refreshing and satisfying. I am vowing to make a couple juices a week, (even though I should do it everyday). You can get all your daily requirements for vegetables and fruit in almost one juice. I recommend investing in a juicer and adding juice to your daily routine!! I guarantee you’ll see a difference in your health.
My favorite combination so far is my Refreshing Carrot Orange juice.
You just need 8 carrots, 4 celery stalks, 2 oranges, and some ginger root. The worst part about juicing is the clean up, otherwise juices are quick and easy to prepare.
And then I had to have balance to all my healthy-ness, so I made some cookies!!

Chocolate Chip Zucchini Cookies
Now for the good stuff!! 😉 Anything with chocolate has to be good.
These aren’t as sweet as your normal cookie, but yet they’ll satisfy your sweet tooth. I love cookies with few ingredients. They only took me 40 minutes from start to finish!! I am working on a recipe for a GF and vegan version.
They are definitely a treat, and not made with anything healthy really. I did use less sugar and whole wheat flour. I also substituted honey for regular sugar, but there is brown sugar as well. They are one of my favorite fall /winter cookies. I like to use the zucchini I picked throughout the summer. I shred it and freeze it in portioned ziplock bags, so all I have to do is unthaw and add to my mixture. It’s already been pre-measured.
Prep time: 10 minutes       Bake time: 25-30 minutes
Ingredients:
- 1 egg, beaten
- 1/2 c butter, softened
- 1/3 c brown sugar
- 1/3 c honey
- 1 tbs vanilla extract
- 2 c whole wheat flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 1/2 c shredded zucchini
- 1/2 c chocolate chips
Directions:  Preheat oven to 350 degrees. 1. In medium mixing bowl combine egg, butter, brown sugar, honey and vanilla extract. Mix well. 2. In small mixing bowl combine all dry ingredients except chocolate chips. 3. Add dry ingredients to the wet ingredients and mix well. 4. Stir in shredded zucchini and chocolate chips.
5. Drop batter onto a greased cookie sheet, and press down a little. Bake for 10-12 minutes.
Enjoy with a glass or your favorite milk!!
Makes 20-24 cookies
