The cool down has been so nice here in the Inland Northwest. It’s a nice change and let’s be honest, heat doesn’t bode well when you are pregnant. I can’t complain though. It’s only be unpleasant with swimming lessons starting. Poor R and I were freezing. last week at lessons. Each day we would get out running to our towels saying “Brr” and “cold, cold” shivering.
So I guess there’s a good and a bad with cooler temperatures, but it’s allowed me to do a lot of baking and preparing for the new baby. I whipped up a lot of batches of muffins, these new oat cups I am about to share, and some great breakfast quinoa muffins you’ll want to stay tuned for.
What’s better in the morning then some great oatmeal? Well sometimes you want a little bit of a change in the morning, especially in the hot summer months. These Raspberry Oat Cups are the perfect change. Still like having your bowl of oatmeal, but in a muffin form. It’s great to have a muffin or oat cup with no added sugars too, no gluten or flour needed and a few simple ingredients.
If you let them cool enough you’ll be able to eat them like a muffin, or you can eat them warm with a little honey or maple syrup right out of the muffin cup. They are easily freezable, which is what I did so we can have some quick snacks or breakfasts when we are in a bind or out of time. It’s nice having a quick breakfast on hand for those busy mornings, especially with demanding toddlers who love their food on their schedule and on time.
R loves picking raspberries and it’s been fun letting her be involved with seeing the fruits of her labor and tasting the yumminess involved with using them in baking. She loves berries and she loves eating mommie’s “treats.” It’s something we love sharing together and I love that we do. It’s fun making these new recipes for her to enjoy and making sure they are healthier and tastier than other recipes around.
Now you can decide if you think they are as good as R does. Sometimes I don’t know if she is bias or not 😉 Sweetened with bananas, unless you want more sweetness in which you can add a little maple syrup or honey. No dairy, eggs or gluten and the perfect mix of cinnamon and spice with fresh raspberries picked by yours truly.
- 3 c oats
- 2 c almond milk
- 3 bananas (ripe & mashed)
- 3 Tbs ground flaxseed
- ½ tsp nutmeg
- 2 tsp cinnamon
- 1 tsp baking soda
- 2 tsp baking powder
- ½ tsp salt
- 3½ c fresh raspberries (or frozen)
- ½ c maple syrup or honey (optional)
- Preheat oven to 375 degrees and prepare muffin tins with liners or grease well.
- In a large mixing bowl add bananas, almond milk, ground flaxseed and mix until bananas are smooth and not chunky.
- Add in the nutmeg,cinnamon, baking soda, baking powder, and salt.
- Stir in the oats and maple syrup (if using, I personally didn't think they needed it, but I tried both).
- Gently stir in the raspberries, trying not to break them up.
- Pour into desired muffin tins and bake for 20-24 minutes.
