Happy Monday!!
I am sure you are all wondering if we are having a girl or boy, but we’re going to have to wait to spread the beans for a week or so. Baby was one active baby, and wouldn’t stop moving around!! We will announce it on the blog once all my family and close friends know.
I will also have my marathon recap from Sunday in the next couple of days. It was definitely too warm for running for this baby mama…..but some how I managed a……(I leave you in suspense).
Raw Oatmeal Cookie Dough Bites
Sometimes when you are prego you crave the most unhealthy things. I try to combat these cravings with a healthy substitute. Often times in pregnancy when you are craving something sweet or salty, it is because you are lacking an important nutrient. Most times it is protein and magnesium.
So the other night I decided instead of giving into some chocolate and ice cream, I would make my avocado chocolate mousse (vegan) and these Raw Oatmeal Cookie Dough Bites. The bites definitely hit the spot.
I like making treats that are easy to make, and will still satisfy my sweet tooth, while also fueling my long runs and acting as a great recovery snack for after my sweaty runs.
They are the perfect blend of sweet and yum!! The raisins give the bites a subtle sweetness that will help sustain workouts, as well as the oatmeal. The PB of course offers protein. Next time around I am adding coconut and ground flaxseed!!
Total time: 10 – 15 minutes
Ingredients:
- 1 c Peanut Butter or Almond Butter (I prefer crunchy)
- 3/4 c rolled oats
- 1/3 – 1/2 c raisins
- 1/4 c chopped pecans (optional, could sub coconut and flax here if you want)
- 1/2 – 1 tsp cinnamon
- Little water to help with forming the bites
Directions: Add all ingredients to a small bowl, except for the water, and mix until well combined. Once all ingredients are well combined, begin forming bites. Depending on the consistency of the peanut butter you made need to add a little water to help with forming the bites.
Store in an air tight container in the fridge. (I think they would be great with some shredded coconut and ground flaxseed too)
Yields: 18 bites

I need to make these bites ASAP! I love how there’s no added sugar and they look so easy. What a great snack for after a tough training session:)
