Vegan Ice Cream Recipes: Peanut Butter & Blueberry Coconut

Since it’s been so hot lately, and doesn’t seem to want to cool down any time soon, I have been experimenting in the kitchen without turning the oven on. Treats that require no oven tend to be great for those hot summer days.

In fact, the other morning I was so hot after a morning run, I whipped up a fast vegan ice cream. It literally took me 5, maybe 10 minutes. It was 3 ingredients + a blender. Seriously, nothing more, nothing less. I thought I should share some of the great recipes with you.

Oh and feel free to experiment with your own ice cream, by throwing in a variety of fruits!! There’s so many combinations I can’t wait to try.

Peanut Butter Chocolate Ice Cream (Vegan, Sugar Free and GF)

Who would have thought that vegan ice cream would be so simple to make (not so simple to photograph though).

Vegan Peanut Butter Chocolate Ice Cream

I love recipes with simplicity and that contain few ingredients. This ice cream only has 3 ingredients and definitely hits the spot after sweat sessions on hot July mornings…I mean after a long, hot day needing a dessert.

Okay so I may have had some for breakfast the other morning, but at 26 weeks pregnant you get cravings from time to time, and at least this recipe doesn’t have anything harmful in it. It’s better than a Dairy Queen run or even Froyo. If you don’t like peanut butter and chocolate (YOUR SERIOUSLY WEIRD), then you probably won’t be a fan of this mixture.

My hubby is one of their weirdos (but I still LOVE him) that doesn’t like peanut butter and chocolate as much as me, thus this wasn’t his favorite dessert I have made. He still gave it 7 stars (out of 10). Not bad for a non chocalohlic like myself.

Total Time: 5 – 10 minutes

Ingredients

  • 4 frozen bananas
  • 2 Tbs peanut butter
  • 2 Tbs cacoa nibs

Directions: Blend all ingredients in a blender or food processor until smooth like ice cream, or to a consistency of your liking. Transfer to a freezer safe container and store in freezer. Enjoy!!

You can eat it right away!!

Servings: about 6 (1/2 cup servings)

Vegan Coconut Blueberry Ice Cream (Sugar Free & GF)

Since my hubby isn’t a big fan of peanut butter and chocolate together, I thought I would make him a frozen treat he can enjoy as well. I had more than enough frozen blueberries to use so I thought I would give coconut and blueberry ice cream a try.

If you have ever had Coconut Bliss ice cream (if you haven’t you NEED to try it), you’ll love this simple recipe. Again I was determined not to add any sugar, which isn’t hard when using fruit as your ice cream base.

Believe me, it won’t take you more than 10 minutes to whip this together. I am definitely going to make my own ice cream for my little girl’s birthday parties, because it is so simple and so much more healthy. You don’t even need a ice cream maker…although I do have one I should use at least once.

 

I may never need to buy ice cream again…..well unless it’s Coconut Bliss that is!!

Vegan Blueberry Coconut Ice Cream

A great summer treat you won't be able to resist. It's sugar free and GF!!
Ingredients
  • 5 frozen bananas
  • 2½ c frozen blueberries
  • ½ c coconut cream
  • 4 Tbs shredded coconut
Instructions
  1. Add all ingredients, except for ½ cup of frozen blueberries, to a blender or food processor and blender until smooth or to a consistency most like ice cream.
  2. (I add the frozen produce in first than the coconut cream and coconut).
  3. Once well blended, stir in the ½ c frozen blueberries.
  4. Transfer to a freezer safe container and store in the freezer. Enjoy!!
