Creamy Avocado Pesto Pasta

The cross country season is upon us. I am taking a little time of leave until the end of the month, but still plan to attend the meets in September. I am not able to turn out to practice just yet to run with the girls and I miss it!! I am being mindful of my recovery and taking it easy. I didn’t do a great job of resting after R was born and jumped into running and training again too fast, resulting in a beat up, broken down body months afterwards and nagging injuries.

I think sometimes we believe we have something to prove and we have to be going and back at it instantly. I try not to think of the missed days of running, but instead think of the needed days of rest and recovery for my body, so I can come back stronger and faster. After two weeks I am antsy to jump back into the saddle, so to speak, which is probably why I did so soon after R was born. Going to the cross country meets will hopefully help keep my mind off of my own running….or it just might make me want to run again. Our first meet is tomorrow.

Hopefully I survive it with the two kiddos. That’s why they make strollers. The stroller will keep my very active R contained, since she loves to run. Any more on our walks and runs, she just wants to get out of the stroller and “walk” which is more of a run.

Part of recovery begins with good nutrition. After the body has been through trauma, such as labor, it needs proper nutrition to heal properly. Also, when nursing the mother’s nutrition is very important. Trying to have our wholesome meals, and it’s been easy with my mom around to cook for us. She’s done a great job making vegetarian dishes and some of our favorite dishes.

Creamy Avocado Pesto Pasta

This is one of our favorite dishes through the summer, because we have all the fresh basil from the garden. I use the basil to freeze a vegan pesto, but also to enjoy in this vegan avocado pesto. Such a simple recipe and so creamy and rich. Pressed for time, but still want a healthy, wholesome meal? Here’s your fix!!

Creamy Avocado Pesto Pasta yum

This is definitely a dinner worth sharing. This creamy pasta is super easy to make and yummy.  It’s a 15 minute meal, but yet it tastes like a lot of time and effort went into it. All you need are some avocados, basil and spaghetti noodles (and a few spices). Perfect too for the start of cross country. A great pre-race pasta, with essential fatty acids, carbohydrates and high nutritional value. You can even use zucchini noodles as well,.

It’s vegan, so no dairy products and also no soy. After whipping up the homemade creamy sauce, you mix it into your noodles and dinner is served. It would pair nicely with a salad, steamed veggies or grilled salmon. My hubby loves pesto, and he gave it a two thumbs up. Even without the cheese, which he also loves. You can’t even tell there’s no dairy in this. It’s a great substitute for the typical pesto with cheese.

Creamy Avocado Pesto Pasta

If you have a food processor or a high powered blender you are set.

Creamy Avocado Pesto Pasta

Serves: 6
 
A healthy substitute to the dairy filled pesto
Ingredients
  • 1 packaged spaghetti noodles (16 ounce) - I prefer whole wheat or GF
  • 2 avocados, peeled and pitted
  • 2-3 cloves garlic
  • 1½ - 2 c fresh basil leaves
  • 1½ Tbs nutritional yeast
  • 1 Tbs lemon juice
  • Salt & pepper, to taste
  • olive oil (optional)
Instructions
  1. Cook noodles according to package directions.
  2. While noodles are cooking, prepare the avocado pesto using a food processor or high powered blender.
  3. Place avocados, garlic cloves, basil, nutritional yeast and lemon juice in food processor and puree until smooth and well mixed. Scrape down sides of processor to ensure all ingredients are well mixed in.
  4. (You may need to add olive oil, but I didn't have to, to help with consistency)
  5. Stir in salt and pepper to your taste.
  6. Once noodles are done, drain and rinse and return to pan. Then stir in the avocado pesto.
  7. (I had a little sauce leftover. It keeps in the fridge for a couple of days)

The extra pesto is great for dip on crackers. Also, I think it’s great on sour dough.
