Pumpkin Mousse

Okay, so I may go a little overboard with the pumpkin recipes this time of year. But it only comes around once a year, so I have to take advantage of all things pumpkin!!

Thanksgiving is in a few days, but you still have time to make some great desserts. If you missed my Raw Pumpkin Pie you need to check it out. It’s an old recipe that I did a little redox too. This next recipe is an old recipe as well. I needed to update my horrible photos and tweak some ingredients.

Of course I used some chia seeds in this recipe. Chia puddings are delicious and it’s only natural they be paired with pumpkin at some point. Tis the season…..

We love puddings and mousse in our family, and since I love pudding, well you can guess why this was created. This dessert requires no cooking and it’s a healthy holiday recipe. I used maple syrup for sweetener, some spices, pureed pumpkin, chia sees and milk. It’s vegan and gluten free, and takes minutes to prep. You just have to have patience to let it chill for at least an hour. Making the night before Thanksgiving works great and it’s an easy dessert to assemble.

I think it is a perfect breakfast as well. There’s nothing to feel guilty about, so go ahead serve it up for breakfast. on Thanksgiving morning. The pumpkin is rich in vitamin A and antioxidants. Just don’t eat too much, because your skin may turn yellow. That happened to me once…..so I may have a problem with the yellow and orange squashes and pumpkins 😉 You know if your addicted if your skin turns yellow……I digress.

Prep time: 5-10 minutes              Total Time: 1 hour

Ingredients: 

  • 2 c pureed pumpkin, (canned or fresh)
  • 2/3 c coconut or almond milk
  • 2 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 3/4 tsp cinnamon
  • 1-2 Tbs maple syrup
  • 4 Tbs chia seeds (optional)

Directions: Combine all ingredients except chia seeds together in blender or food processor until smooth. Transfer to a bowl, stir in chia seeds and let set in fridge for an hour. Enjoy!!

Servings: 4 – 6
