Happy Wellness Wednesday. As you may know, I, Mariah, haven’t been posting as much on Instagram. I hope to change that soon. Once I get up to speed with my new job, I plan on becoming more present on Instagram and the blog. I intend on creating more recipe videos and also hosting various giveaways throughout the year.
Per your request, I am going to discuss FOOD. I have always loved food and eat a lot of it. When I was a kid, I could eat whatever I wanted. Today, I still eat large portions but have altered my diet significantly. I like to stick to a gluten-free diet. I also avoid dairy. I am not sure if there is a term for a vegan that eats meat, but that is what I am.
My sister, Bryanna, provides a lot of recipes on the blog that cater to both the vegans and the dairy-lovers. She has also created many vegetarian dishes that allow for a meat option. I could talk about my sister’s recipes all day. I might be a little biased because she is my sister, but she really is an AMAZING cook. I am going to discuss only a couple of my favorite breakfast meals listed on the blog. You can find my favorite desserts and snacks here.
My go-to breakfast meal is the Spinach Blender Pancakes. This recipe only calls for seven ingredients, which are probably already in your kitchen. You only need oats, milk, spinach, bananas, apple cider vinegar, baking powder, and vanilla. If you are a vegan, you can substitute cow milk for soy milk or Bryanna’s personal favorite Almond milk. I make this recipe during the week because it is easy and quick to make. It is also what I would call a double whammy recipe: healthy and yummy!!
Another favorite of mine is the Flourless Blueberry Pancakes. This recipe calls for oats, milk, yogurt, eggs or flax eggs, blueberries, and vanilla. Like the Spinach Blender Pancakes, you can substitute the dairy ingredients for non-dairy options like almond milk, flax eggs, and almond yogurt. I make this recipe on the weekends after one of my long runs or bike rides. I crave carbs right after a tough workout. This meal satisfies my carb craving and provides the protein I need to restore my muscles. It is also healthy and yummy! Bryanna suggests adding protein powder if you want more protein and making a large batch so you can freeze some. Stock your freezer with the pancakes, and grab out some pancakes when you have those busy mornings.
